These buttery quesadillas are stuffed with breaded popcorn shrimp, crisp bacon, fresh baby spinach, thinly sliced green onions, and a melted blend of Mexican cheeses. Quick and easy, delightfully crunchy, and with just the right of gooey cheese- these Shrimp & Bacon Quesadillas take the bite of dinnertime duress.

Shrimp & Bacon Quesadillas

I read an article today that put into monetary terms what I’m worth annually as a SAHM– $140,000. Six figures, who knew? Probably not many who haven’t done the job themselves. My job titles are many– Wife. Wrangler of Boys. Chef. Taxi Driver. Life Planner. Blogger. The tasks are many, and the list could go on and on and on.

With so much on my plate, it can be a struggle some days to balance everything- especially on busy weeknights. Those nights where there aren’t enough hours to get homework done, dinner on the table, and squeeze in some family time before I blink and the clock chimes to tell me to get going on the bed time routines.

Shrimp & Bacon Quesadillas 

This my friends is where I enlist a little bit of help. There’s no shame in admitting you need some, or even in wanting help. Some nights are from scratch nights, other nights I head to the deep freezer and pull out a box of SeaPak® Popcorn Shrimp. Then I’m back on my dinner time ‘A’ game.

Shrimp & Bacon Quesadillas

Shrimp & Bacon Quesadillas are filled with crisp bites of SeaPak’s breaded popcorn shrimp, savory bacon, sliced green onions, fresh baby spinach, and a blend of Mexican cheeses. Ingredients

  • 8 slices of thick cut bacon, cooked crisp and crumbled
  • 1 18 oz box SeaPak Popcorn Shrimp
  • salt and pepper, to taste
  • 4 green onions, chopped
  • 1 cup fresh baby spinach optional
  • heaping 3 cups of shredded Mexican blend cheese
  • 6 flour tortillas, soft taco size
  • pico de gallo optional- for serving
  • guacamole optional- for serving
  • sour cream optional- for serving

Instructions

  • Cook the shrimp according to the package instructions.
  • On one half of a tortilla, place shrimp, cheese, bacon, spinach, and green onions. Fold over other side of tortilla.
  • Butter the outside of the top of the tortilla. Carefully place the tortilla in a skillet, over medium low heat, buttered side down. Cook the tortilla until the tortilla is crisp and golden brown. Butter the second side of the tortilla and use two spatulas to carefully flip the quesadilla over in the pan, without losing filling. Continue cooking until this side is also crisp and golden brown.

    why fold when you could make a whole one, put another tortilla over the filling, pressing down with the spatula, so the cheese melts & holds them together when you flip. I use a large spatula
