Lemon Pie Pops

Do you love a cold glass of lemonade on a hot day? How about looking forward to a slice of cool lemon merengue pie, or even lemon ice box cake?
I feel like lemon anything is the quintessential summer flavor. Like an unofficial mascot or something.
And speaking of summer necessities… Heeelllooo, Popsicles.
You just can’t go wrong with an ice cold pop when it’s in the 90s and humid.
So it was just good common sense to combine these things into one epic, refreshing treat.
Even better?
They are a little healthier than most ice pops and make a filling snack since made from Greek yogurt,.
You can’t beat a relatively healthy, yummy way to cool off.
Ingredients
To make these, you’ll need:
Greek yogurt– Go for nonfat vanilla Greek yogurt. In a pinch, you can definitely substitute regular yogurt.
Lemon juice– For maximum flavor use fresh lemon juice.
Sugar– Granulated sugar.
Lemon extract– Lemon extract really ups the lemony flavor in these pops.
Food coloring– A couple drops of yellow food coloring give these pops their signature lemon yellow look.
Cookies– Crush a few shortbread cookies, Nilla wafers, or golden Oreos to make “crust.”
How to Make
To make these, stir together the yogurt, lemon juice, sugar, extract, and food coloring until they are evenly combined.
Then, scoop equal amounts of lemon mixture into paper Dixie cups or into popsicle molds.
Sprinkle an equal amount of cookie crumbs on top of the yogurt mixture in each mold and use a toothpick or popsicle stick to gently stir the crumbs into the mixture slightly.
Gently pack down whatever crumbs are left on top.
Insert sticks or colorful straws into the center of the mixture, sticking straight up.
Freeze for at least 4 hours or overnight. Remove paper or remove popsicles from molds and enjoy!
Storing Homemade Popsicles
These lemon pie pops should stay good in the freezer for up to 3 months.
Tips and tricks
- Really want to add more lemon flavor? Add some fresh lemon zest to the yogurt mix.
