Lazy Enchiladas With Taquitos (Viral TikTok Recipe)

These lazy enchiladas with taquitos are going viral on TikTok, and for good reason. This 30 minute meal is quick, easy, and absolutely delicious. Give them a try when you need a change on taco Tuesday, or any other night you need an easy supper that tastes great!

Whether you love or hate TikTok, if you’re familiar with the app- you have to agree you can find some great recipe hacks on there.

Take these lazy enchiladas with taquitos for example.

This dinner recipe is ridiculously easy, and enhances a frozen food item- transforming it into a scrumptious casserole.

Next taco Tuesday, make this instead.

Not that tacos are hard, but lazy enchiladas are even easier- and super tasty too!

Ingredients Needed

This ‘lazy’ recipe only requires a couple ingredients.

To make it you’ll need:

  • Taquitos – Frozen taquitos, any variety will do, but it will need to be at least an 18 count. The filling is up to you. I actually used Costco’s flautas for this because while they’re the same length, they’ve got a hearty filling- more close to true enchiladas.
  • Enchilada Sauce – You can use either red or green enchilada sauce in this recipe- although we tend to prefer the green kind because it’s milder in flavor. If you have extra time, I highly recommend making homemade red enchilada sauce.
  • Cheese – You can top this with any shredded cheese you like, although certain flavors do better than others. We use Monterrey jack, and have occasionally subbed pepper jack. Shredded cheddar and colby jack would also be tasty options.

Once you’ve got all of the ingredients gathered, you’re ready to whip up a batch of the best lazy enchiladas!

How To Make

This shortcut for making enchiladas is super easy to make- I wish I’d thought of it sooner honestly.

Start by figuring out how many taquitos you need to fill your 9×13″ baking dish.

Spread them out on a baking sheet, and bake them according to the time & temperature written on the package.

When done, transfer them to a 9×13 inch baking dish that’s been sprayed with nonstick cooking spray.

The cooking spray isn’t essential since these saucy taquito enchiladas won’t stick, but it will make the later clean up much easier.

Pour the enchilada sauce evenly out over the entire dish.

Sprinkle the cheese evenly out over top.

Bake the dish at 400F for 10-12 minutes, until everything’s nice and bubbly and the cheese has melted on top.

Carefully remove the lazy enchiladas from the oven, and set the dish aside to rest for 5-10 minutes.

When you’re ready serve them and enjoy!

STORING

I don’t really recommend storing leftover lazy enchiladas.

They tend to get, and stay, soggy. And I’ve yet to find a good way to crisp them back up.

However, if you have leftovers and want to store them let them cool completely.

Line an air tight container with parchment paper, then transfer the leftover lazy enchiladas into it.

Seal the container and you can store then up to three days.

TOPPING OPTIONS

Obviously you can enjoy these lazy enchiladas as is, but you can also serve them with yummy add ons.

Some of our favorites include:

  • Fresh Cilantro Leaves
  • Guacamole
  • Salsa or Pico De Gallo
  • Diced Green Chiles
  • Lime Wedges
  • Shredded Lettuce
  • Sour Cream

Adjust them to your liking, and make them to fit your liking.

REHEATING THEM IN AN AIR FRYER

These lazy taquito enchiladas can easily be reheated in an air fryer.

I recommend 400F for 3-4 minutes.

Can Lazy Enchiladas Be Made In The Slow Cooker?

Yes- you can absolutely make these taquito enchiladas in your slow cooker!

To do it, spray the inside of the crock of a slow cooker with nonstick spray.

Add the taquitos to fill the bowl. It’s ok if it takes 2-3 layers to do so.

Pour the enchilada sauce evenly out overtop.

Cover and cook on LOW for 4 hours or HIGH for 2.

Turn the slow cooker off, then sprinkle the cheese evenly out overtop.

Return the lid, and let rest just until the cheese has melted.

Serve & enjoy!

TIPS & TRICKS

  • To avoid extra dishes, you can bake the taquitos in the casserole dish instead of using a sheet pan and then transferring them. If first baking them on a sheet pan, use tongs to transfer them to the prepared casserole dish as they will be HOT.
  • If you like extra crispy cheese, broil the dish (watching it carefully) just until the cheese is golden brown on top.
  • Air frying these is also an option – place them in the basket and bake at 400F for 3-4 minutes.

Ingredients

  • 1 28 oz box frozen taquitos
  • 1 28 oz can green (or red) enchilada sauce
  • 2 cups shredded Monterrey jack cheese can substitute pepper jack as well

Instructions

  • Bake enough taquitos to fill at 9x13" baking dish in an even layer on a baking sheet according to package directions. For me this was 16 minutes at 400°.
  • Spray a 9x13" baking dish with nonstick spray, and add the baked taquitos to it arranging them in a single layer.
  • Pour the enchilada sauce evenly out overtop of the taquitos, then top with the cheese in an even layer.
  • Bake the dish another 10-12 minutes, again at 400°- broil if needed to crisp up the cheese.
  • Remove the dish from the oven, then let it rest for 5-10 minutes.
  • Serve & enjoy!
