In the South, we love our fritters.
Fried, golden brown pieces of batter surrounding fruit or veggies.
Sort of like donuts but with pieces of other foods in them.
They are absolutely delicious!
And nothing is better than a good peach fritters recipe!
What are peach fritters?
A fritter is a portion of fruit, veggies, or even meat battered in dough and deep fried.
In this case, pieces of peaches get folded into a sweet batter before being fried to golden brown perfection and drizzled with a powdered sugar glaze.
Ingredients
To make these you’ll need:
- Flour– All purpose
- Sugar– Granulated
- Baking powder– For lift
- Salt– To balance the sweet
- Cinnamon
- Buttermilk– Don’t have any? Make your own by stirring a teaspoon of lemon juice or white vinegar into a cup of milk
- Eggs
- Butter– Melted
- Vanilla extract– Real is best
- Peaches– Peeled and diced into small pieces
- Glaze ingredients– Powdered sugar, milk, vanilla
- Canola oil– For frying
How to Make
This peach fritters recipe is pretty easy to make!
Start by whisking the powdered sugar, milk, and vanilla for the glaze together in a large bowl until it’s smoothly combined.
Set the glaze aside.
Then in a large heavy bottom pot, heat the oil until it reaches 350 F.
While the oil heats, whisk together the flour, sugar, baking powder, salt and cinnamon in a large mixing bowl.
Set the dry ingredients aside.
In a separate bowl, whisk together the buttermilk, eggs, melted butter, and vanilla.
Then stir into the flour mixture until just combined.
Fold the peaches into the mixture.
Drop about 2 tablespoons of batter into the heated oil per fritter, making a few fritters at once.
Fry the fritters until golden brown and puffed, about 4-5 minutes.
Carefully remove the golden fritters from the oil and let it drain on a wire rack.
Repeat until all the batter has been used, being careful not to overcrowd the pot.
Let them cool for a few minutes before dipping into the glaze.
Allow the excess glaze to drip off then return to the wire rack to finish cooling.
Serve and enjoy!
Storing Leftovers
These are best fresh, but if you have leftovers store them in an airtight container in the fridge for a few days.
Reheat them in a warm oven to take the chill off.
Tips and Tricks
- A candy thermometer works wonders here! It will help you make sure the oil is the right temperature.
- Don’t over crowd the pot while you are frying the fritters. This will keep the oil at the right temperature and prevent them from sticking together.
- Let the fritters cool until you can easily handle them before dipping them in the glaze to help the glaze set on the fritters.
- A slotted spoon or a spider spoon is perfect for fishing the fritters out of the oil.
