Easy Microwave Egg Scramble Cups
Easy microwave egg scramble cups are the homemade version of the store bought just add an egg cup. Ready in under 5 minutes, this is a breakfast that will make your morning so much easier!

They are ready in under 5 minutes and you get to enjoy a hot, protein packed breakfast.
How’s that for some serious morning microwave magic?
Ingredients
To make these you’ll need:
- Ham– Used diced cooked leftover ham or even diced deli ham.
- Cheese– Shredded cheddar or another shredded cheese of your choice
- Veggies– Finely diced yellow onion and bell pepper. A lot of grocery stores sell this combination prediced in their produce department so you can save yourself some time.
- Shredded hash browns– From the refrigerated section
- An egg– 1 large egg
- Salt and pepper– To taste
You’ll also need you’ll need 1 cup glass bowls for this recipe. I used the Anchor Brand from Target or you can buy a similar bowl online here.
How to Make
These microwave egg scramble cups are so easy.
Just spray a non stick microwave safe bowl with non stick cooking spray.
Add the ham, cheese, onion, salt and pepper, potatoes, and egg to the bowl.
Gently stir this mixture together to combine it with a fork.
Microwave the bowl for 1 minute.
Use oven mitts to carefully remove the hot bowl from the microwave.
Stir the egg mixture, and then pop it back in the microwave for another 30-45 seconds or just until the egg is set and cooked through.
Carefully remove the HOT bowl from the microwave and let it rest until it’s cooled enough to eat.
Enjoy!
Storing Leftovers
This is a dish you’re not meant to have leftovers of.
I recommend only making what you will eat at the time.
Tips and Tricks
- You can use 2 small eggs instead of a single large egg. However, you’ll need to almost double the cook time.
- Be very careful when you take the bowl out from the microwave. It will be extremely HOT.
- You can substitute other toppings for the ham like crumbled bacon or even skip the meat and use chopped up mushrooms instead.
