Creamy Boursin Chicken
Creamy Boursin chicken is an easy, indulgent dish you can have on the table in under 30 minutes. This chicken is perfectly seasoned and seared then smothered in an indulgent cheesy, cream sauce. Perfect over pasta or mashed potatoes!

Ingredients
To make this you’ll need:
- Chicken– Boneless, skinless chicken breasts trimmed of fat and pounded flat with a meat mallet.
- Olive oil– To coat the chicken in and saute the chicken
- Spices– Smoked paprika, garlic powder, onion powder, salt, and black pepper
- Butter– To saute the aromatics for the sauce
- Aromatics– A half of a small white onion thinly sliced and minced garlic
- Boursin cheese– Any variety you like. The classic Garlic and Herb variety works perfectly.
- Chicken broth– Use lower sodium if you are worried it’s going to be too salty.
- Garnish– Parmesan cheese and fresh herbs
How to Make
Creamy Boursin chicken is so delicious that it’s surprising just how easy it is!
To do it, just whisk all of the seasonings together in a mixing bowl.
Add the chicken you’ve pounded flat into the mixing bowl and drizzle the oil evenly out over top.
Turn the chicken to evenly coat it in the spices.
Then, heat 1 tablespoon of olive oil in a large skillet set over medium high heat.
When the oil is hot, cook the chicken in the oil for 3-4 minutes per side, until nicely browned on each side.
Check the temperature and when it’s 160° transfer it to a waiting plate where the residual heat will continue cooking it through.
Melt the butter in the same skillet you cooked the chicken in and saute the onion and garlic until the onion is soft.
Add the broth to the skillet to deglaze the pan, scraping any browned bits off the bottom with a sturdy spoon.
Turn the heat down to low and add the cheese to the skillet, stirring until it’s melted and smooth.
Let the sauce simmer, just until it’s thickened.
Add the chicken back to the pan, spoon the sauce evenly out overtop, and serve warm.
Garnish with Parmesan cheese and fresh herbs if desired.
Serving Suggestions

Storing Leftovers
Store leftovers in an airtight container in the fridge for up to 4 days.
Reheat on the stove or in the microwave until warmed through.
Keep in mind, the sauce will thicken as it sits in the fridge so you might want to stir in a little more chicken broth when you are reheating the chicken.

Instructions
