Add all of the seasonings to a mixing bowl, then whisk them together until evenly combined.
1 tsp smoked paprika, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp salt, 1/4 tsp ground black pepper
Add the prepared chicken to the mixing bowl, drizzle the oil evenly out over top, and turn the chicken to evenly coat.
4 boneless, skinless chicken breasts, 2 tbsp extra virgin olive oil
Add 1 tablespoon of olive oil to a large skillet set over medium high heat. When hot add the chicken and cook for 3-4 minutes per side, until nicely browned on each side. Check the temperature and when it's 160° transfer it to a waiting plate where the residual heat will continue cooking it through.
Add the butter to the same skillet to melt, stir in the onions, and cook until they're translucent- stirring often. Add the garlic and cook for 60 seconds. Add the broth to the skillet to deglaze the pan, scraping any browned bits off the bottom with a sturdy spoon.
2 tbsp butter, 1/2 small white onion, 3 tsp minced garlic, 3/4 cup chicken broth
Reduce the heat to low and add the cheese to the skillet, stirring until it's melted and smooth. Let the sauce simmer, just until it's thickened.
1 5.2 oz pkg boursin cheese
Add the chicken back to the pan, spoon the sauce evenly out overtop, and serve warm.
