Brownie Trifles With Cookie Butter
Brownie trifles with cookie butter offer gourmet taste and a beautiful presentation in an easy to whip up dessert. Layers of fudgey brownie pieces alternate with a rich, 4 ingredient cookie butter mousse. It’s a cookie butter brownie match made in heaven!

Boxed brownie mix always has a place in my pantry unless of course I just used it to make dessert.
It’s easy and really, while you could make homemade from scratch brownies, when there are such good mixes available, why bother going through the extra work?
Especially if you are planning to upgrade them to an equally easy dessert recipe that will really wow a crowd.
Take for example this brownie trifle with cookie butter mousse.
Layers on layers of fudge brownies and decadent whipped cookie butter mousse.

Only four extra ingredients and you’ll have everyone you make this for thinking you are a rock star in the kitchen because it is that good.
So make this the next time you are entertaining, want a special but easy weeknight dessert, or just want to treat yourself.

Ingredients
To make these you’ll need:
- Brownie mix– I used Nestle Toll House Brownies and More Baking Mix with Semi-Sweet Chocolate Morsels, but use any brownie mix you like. You’ll also need the ingredients listed on the box to bake the brownies
- Heavy cream– Do not substitute lower fat dairy as the mousse won’t work
- Cookie butter– The creamy kind. You can use the store bought variety or our homemade version.
- Sugar– Powdered
- Vanilla extract– The real stuff is best

How to Make
These brownie trifles with cookie butter are so decadent but so easy!
Just prepare the brownies according to the package directions.
Let them cool completely before making the cookie butter mousse.
To make the cookie butter whisk together on high speed the whipping cream, cookie butter, powdered sugar and vanilla in your stand mixer fitted with the whisk attachment until everything’s evenly incorporated.
The mousse is ready when the whipped cream thickens into a mousse-like texture and holds stiff peaks.
Set the mousse aside and crumble the cooled brownies into a bowl.
Then add a thick layer of brownie pieces to the bottom of 3 small trifle bowls or glasses.
Spread out a layer of cookie butter mousse over top of the crumbled brownies evenly.
Repeat one to two more times to fill the trifle dish, finishing by topping the trifles with more crumbled brownie pieces.
Serve immediately, or chill until ready, and allow them to sit at room temperature a solid 5 minutes before serving.
Enjoy!

Storing
Store any leftover brownie trifles in the fridge tightly covered with plastic wrap for up to 3 days.
Let them sit out at room temperature for 5 to 10 minutes prior to serving.

Tips and Tricks
- Use any brownie mix you like but I recommend any variety that has added chocolate chips in.
- You can make one big brownie trifle instead of several smaller ones using a large trifle dish.
- Make sure the brownies are cool before you build the trifles. If they are warm, the cookie butter mousse will melt.
- For an extra treat top them with whipped cream prior to serving!

Instructions

- In the bowl of a stand mixer, add in the whipping cream, cookie butter, powdered sugar and vanilla. Using the whisk attachment, mix on high until everything’s evenly incorporated and the whipping cream has thickened into a mousse-like texture, about 2-3 minutes.2 cups heavy whipping cream, 1 cup creamy cookie butter, 1/2 cup powdered sugar, 1/2 tsp vanilla extract
- Crumble the cooled brownies over and into a bowl. To the bottom of 3 small trifle bowls or glasses, add a hearty layer of crumbled brownie pieces.
- Spoon a layer of cookie butter mousse over top of the crumbled brownies and use the back of the spoon to lightly spread it out evenly. Repeat one-two more times, as needed, and top with more crumbled brownie pieces.
- Serve immediately, or chill until ready, and allow them to sit at room temperature a solid 5 minutes before serving.

Darlene it’s a whipped spread made from cookie crumbs with a spreadable consistency like peanut butter. It’s usually found near the peanut butter or on an adjoining shelf!
