Buffalo Chicken Garbage Bread

Buffalo chicken garbage bread is any cheese and wing lover’s dream. Packed full of tender, spicy chicken, an ooey gooey blend of melted cheddar and mozzarella cheese, and just enough ranch dressing, you’ll adore this stromboli.

Being that we have all these boys and seeing as how I am cheap I try to buy in bulk whenever possible.

Notice I said cheap. I’m not even going to try and dress it up and label myself as frugal, thrifty, etc. I’m just cheap.

As part of my cost-cutting efforts, we have a membership to Costco and that’s where the majority of our groceries come from.

That being said, almost every trip to Costco, my kids manage to convince me to buy them lunch, a snack, an ‘I’m going to die right this very minute if I don’t eat’ something from the food court.

Their favorite thing to order is the Chicken Bake and I don’t blame them for loving it.

It’s basically creamy chicken and cheese wrapped in pizza dough.

Super delicious and that’s pretty much what this garbage bread is- except the buffalo chicken version.

Wait. What is garbage bread?

Garbage bread is basically another name for a stromboli loaded with meat and cheese.

Not familiar with stromboli? It’s pizza dough folded around toppings to create sort of a big Hot Pocket situation.

They come in all sorts of different varieties: meat lovers, taco, pepperoni, cheesesteak…

If you can stuff it into pizza dough, you can turn it into garbage bread.

Ingredients

To make this you’ll need:

  • Chicken– Cooked, shredded or diced, chicken. This is perfect for using up leftovers. If you don’t have leftover chicken, save yourself some time and shred some rotisserie chicken.
  • Pizza dough– I always have Easy Homemade Pizza Dough on hand so will often use that. If you don’t have homemade dough in your freezer, you can use the store bought pizza dough that you can find in the refrigerated or frozen section. If using frozen dough, defrost it first.
  • Cheese– Both shredded mozzarella cheese and shredded cheddar cheese.
  • Wing sauce– Use your favorite kind of wing sauce. We like Frank’s.
  • Ranch dressing- Not a fan of ranch? Sub blue cheese instead.

How to Make

This buffalo chicken bread is super easy to make.

To do it, preheat the oven to 425°F.

Then, toss the shredded chicken with 1/2 of your wing sauce. 

In a small bowl, stir together the the ranch dressing and remaining wing sauce. Set it aside.

Next, roll out dough into a long rectangular shape on a floured surface.

Spread buffalo ranch sauce evenly across the dough.

Add chicken and then top with both cheeses.

Roll the dough up from the side to form a log.

Seal both ends (prevents ‘oozing’ while baking) and place seam side down on a nonstick or greased baking sheet.

Bake for 30 minutes.

After 30 minutes or when the outside of the dough is golden, remove it from the oven and let it sit and rest for 5-10 minutes before cutting into slices.

Serve and enjoy!

Storing Leftovers

If you have leftovers of this buffalo chicken bake, you can let it cool and then wrap it tightly in foil and refrigerate it for up to 3 days,

Reheat in a hot oven until warm all the way through and the cheese is melted.

Tips and Tricks

  • You can adjust the heat level by using more or less buffalo sauce. Switching the hot sauces for something more or less spicy can also help.
  • Make sure you seal both sides of the dough to prevent the filling from oozing out.
  • Serve with a side of pizza sauce or more ranch or blue cheese dressing for dipping.

Ingredients

  • 2 cups cooked chicken shredded or diced
  • 1 tsp. olive oil
  • 1 pizza dough we used homemade and let it defrost in the refrigerator overnight
  • 8 oz. of shredded mozzarella cheese
  • 8 oz. of shredded cheddar cheese
  • 1/2 cup of buffalo wing sauce divided
  • 1/4 cup of ranch

Instructions

  • Pre-heat oven to 425°F. Toss chicken with 1/4 cup of your wing sauce. You can add more or less depending on your desired spiciness. Stir to combine, the ranch dressing and remaining 1/4 cup wing sauce.
  • On a floured surface, or counter top, roll out dough into a long rectangular shape. Spread buffalo ranch sauce evenly across the dough. Add chicken and then top with both cheeses.
  • Pick a side and roll the dough up to form a log. Seal both ends (prevents ‘oozing’ while baking) and place seam side down on a non-stick or greased baking sheet.
  • Bake for 30 minutes. Let sit and ‘rest’ for 5-10 minutes before cutting into slices, then serve!
