Blueberry Hand Pies (Air Fryer Recipe)

Air fryer blueberry hand pies are flaky, golden, and filled with sweet, juicy blueberry goodness. They’re an easy dessert perfect for casual gatherings or  that cooks quickly and gives you that perfect crisp without turning on the oven.

Blueberry hand pies are the perfect simple spring or summer treat.

They burst with blueberry flavor and this version uses the air fryer to bake them so they cook faster without heating up the kitchen and adding to the heat on a warm day.

And you still get that beautiful flaky crust and all that blueberry goodness.

Top them with a sweet, simple glaze to take this treat over the top and watch them disappear!

Ingredients

To make these you’ll need:

  • Blueberry pie filling– A 21 ounce can. If it’s blueberry season, you can also make your own.
  • Pie crusts– A 2 pack of refrigerated pie crusts. Let them warm up to room temperature.
  • Water– To help seal the pie
  • Glaze ingredients– Powdered sugar, milk, and corn syrup

How to Make

These air fryer blueberry hand pies are so easy to make!

Just unroll the crusts onto a sheet of parchment paper and using a 3-4″ cookie cutter or biscuit cutter to cut out 6 circles from each crust.

Add a large spoonful of pie filling to the center of 6 of the pie crust circles, leaving some untopped crust around the edges.

Set the blueberry topped crusts aside while you cut small slits in the center of the remaining 6 pie crust circles with a paring knife.

Dip the tip of your clean finger or a small pastry brush in water and gently dampen the edges of the crust around the pie filling topped circles.

Dry your hands and then gently squeeze the outer edges of the remaining pastry circles to spread them out slightly.

Lay the circles over the pie filled crust.

Press the tines of a fork down into and all around the edges of the pie crusts to crimp them together and seal the edges shut.

Put 3 to 4 prepared hand pies into the basket of your air fryer and spray them lightly with cooking spray.

Air fry them at 350° for 8-10 minutes or just until the crusts are golden brown and flaky.

Transfer the hand pies to a serving plate, then repeat this until all the pies have been baked.

Once all the pies are baked, whisk together all the ingredients for the glaze together in a small bowl until they are smooth.

Drizzle the glaze evenly out overtop of the hand pies, and let the pies rest just until the glaze sets.

Serve them warm and enjoy!

Storing

Store them in an airtight container in the fridge for up to a week.

Reheat them in the air fryer if desired before serving or enjoy them straight out of the fridge.

Tips and Tricks

  • You could brush the pies with egg wash (an egg beat with a tablespoon of water) instead of spraying them with nonstick spray.
  • Make sure you cut slits into one side of the pie crust or else the pies will explode.
  • Do not overfill the pies. If you over fill the pies, the filling will leak out of the crusts.
  • The glaze is optional.
  • If you do not want to serve them as a handheld dessert, you can absolutely serve them in a bowl with a warm scoop of ice cream.

Ingredients

For The Hand Pies

  • 1 21 oz can blueberry pie filling
  • 1 2 pk refrigerated pie crusts at room temperature
  • water for sealing

For The Glaze

  • 1 cup powdered sugar
  • 1-3 tbsp milk
  • 1 1/2 tbsp corn syrup
