You all know I love my smoker.
It imparts so much flavor on whatever it’s smoking.
That extra flavor really takes a basic recipe and kicks it up .
The same can be said for this smoked eye of round.
You’ll notice only a few ingredients but the result is top notch and so full of flavor thanks to the smoker.
Ingredients
To smoke the eye of round itself you’ll need:
- Eye of round roast– Get a 3 to 4 pound roast and trim the fat off.
- Steakhouse marinade mix – The dry kind in the packet- can be found in the spice aisle of your grocery store.
- Worcestershire sauce
If you want to use the beef for sandwiches, you’ll need:
- Rolls– Look for good quality hoagie rolls in the bakery.

Cheese– I recommend Swiss but you can use whatever kind of cheese you like. Provolone also works well.
- Creamy horseradish sauce
- Onion– Thinly sliced white onion
How to Smoke Eye of Round
It is so easy to make delicious smoked eye of round.
Just drizzle worcestershire sauce evenly out over the beef and then rub the dry marinade on all sides of the meat to coat it.
Smoke at 250° for 2 1/2 – 3 hours, until the internal temperature reaches 125-130 degrees.
Carefully transfer the hot, smoked roast to a disposable aluminum pan.
Wrap the pan tightly with aluminum foil, and let it rest undisturbed for 30 minutes.
Thinly slice the rested meat on a cutting board.
Pour any juices in the pan evenly out over the sliced meat before serving.

How to Make Smoked Roast Beef Sandwiches
It’s pretty easy to turn this smoked eye of round into the best roast beef sandwich ever!
Just slice each hoagie bun in half lengthwise and toast the buns if you’d like.
Spread the creamy horseradish sauce evenly out over the inside of each bun.
After you’ve slathered on the sauce, put each roll on a rimmed baking sheet.
Top each roll with your desired amount of meat and two slices of cheese.
Bake the sandwiches at 350° for 5-10 minutes, just until cheese has melted over the meat.
Serve warm with more creamy horseradish sauce.

Storing Leftovers
Cooled completely, sliced roast beef will store in an airtight container or ziplocking bag in the refrigerator for up to 5 days.
Can I freeze smoked beef?
Yes! You can freeze this for up to 3 months in a freezer safe ziplocking bag or other airtight container along with the juices.
Reheating
Reheating the smoked beef will always mean your meat cooks more.
To prevent it from overcooking, add the meat to a large skillet and pour roughly 1/3 cup of water into it.
Cover the skillet and cook for 3-5 minutes to steam the meat.
Don’t be worried if it’s turned gray.
What type of wood should I use to smoke eye of round?
You can use any wood you like, but my favorites include:
- hickory
- oak
- peach
- mesquite
Tips and Tricks
- Unlike most smoked recipes, this roast has a very short cook time. Make sure to keep the smoke up the whole cook time to really infuse it with that flavor.
- Trimming the fat can be trickly when it comes to beef. Make sure to trim away any excess fat, including the silver skin underneath. If you don’t it can result in chewy meat.
- Slicing beef can be tricky without an industrial meat slicer. If you’re not using an actual meat slicer, use a very thin and sharp knife. Slice slowly and as thin as possible.
- This meat can be enjoyed cold and makes excellent cold sandwiches as well!
