Ingredients

To make these you’ll need:

  • Flour– All purpose flour. Using another variety like whole wheat will result in denser waffles.
  • Baking powder– For leavening
  • Salt– To balance the flavors
  • Eggs– Separate the whites from the yolks since you will be beating the whites until they are fluffy.
  • Sugar– Granulated
  • Pumpkin puree– Make sure you aren’t using pumpkin pie filling
  • Spices– Cinnamon, nutmeg, and ground cloves
  • Vanilla extract– Real vanilla not imitation.
  • Butter– Melted
  • Oil– Vegetable oil

How to Make

While you might think making homemade pumpkin spice waffles is complicated, it’s really not!

To start, just beat egg whites until stiff peaks form with a hand or a stand mixer.

Beat in the sugar as the peaks are forming.

Set the egg whites aside

Then, stir together the remaining ingredients in a separate bowl until they are just combined.

Finish the waffle batter by gently folding in the whipped egg whites, until they are just incorporated.

Cook in a waffle iron according to waffle iron instructions.

Top as desired and serve and enjoy!

What to Top Pumpkin Waffles With

You can never go wrong with butter and maple syrup on a fresh pumpkin spice waffle.

But you could get creative and top them with:

Storing Leftovers

Store leftovers tightly wrapped in the fridge for up to two days.

Reheat them in a hot oven until warmed through.

Can I freeze pumpkin waffles?

Yes!

To freeze them, let them cool completely.

Wrap each waffle individually in foil so it is tightly covered.

Place the covered waffles in a ziplocking freezer bag and freeze for up to 3 months.

To reheat them, pop them in a toaster (which may not work depending on the size of your waffle iron) or put them on a baking sheet in a hot oven until warmed through.

Tips and Tricks

  • Make sure the egg whites are properly whipped and don’t rush this. They need to be stiff peaks so that the waffles are fluffy.
  • Don’t over mix the ingredients. This results in a denser waffle.
  • If you reheat the waffles, keep in mind they will be crispier due to reheating.
