And it’s some sort of rule that any food served on a stick is automatically more delicious and more fun.
That rule is doubled if said food can be dunked into dipping sauce.
Plus it gives you choices, letting you grill it on a grill pan or cook it outside so you can enjoy it any weather.

Ingredients
To make this you’ll need:

- Coconut milk– The kind in a can not the kind from the dairy department.
- Red curry paste– You can find this in the Asian foods section or online here.
- Spices– Curry powder, salt, and coriander
- Honey– For sweetness
- Chicken– Chicken thighs cut into cubes
You’ll also need skewers.
How to Make
Chicken satay is so easy to make!
Just whisk the coconut milk, curry paste, curry powder, coriander, honey, and salt together in a large bowl.

Add the chicken cubes to mixture, gently stirring until the chicken is coated.
Cover the chicken and refrigerate it for an hour to marinade.

Once the chicken has marinated, thread it onto skewers.
Grill the chicken or broil it on high for 10 minutes.

Then flip it over and cook it for another 5-10 minutes or until the chicken is cooked through.
Serve and enjoy!

Storing Leftovers
Store leftovers in an airtight container in the fridge for up to 3 days or so.
Reheat them in a hot oven until warmed through.

Tips and Tricks
- You can use chicken breast in place of chicken thighs if you’d like. If you use chicken breast, you might want to brush the skewers with extra coconut milk when you flip them.
- This is fairly mild. You can up the heat by adding more curry paste or add other flavors like ginger and garlic to the marinade.
- Chicken satay is delicious when you grill it on an outdoor grill. If grilling these and using wooden skewers, be sure to soak them first so they don’t burn while cooking.

Chicken Satay
Ingredients
- ยฝ cup coconut milk
- 1 tablespoon red curry paste
- 2 teaspoons curry powder
- 2 teaspoons honey
- 1 teaspoon salt
- ยฝ teaspoon coriander
- 2 lbs chicken thighs cubed
Instructions

- Thread the chicken onto skewers.
- Grill or broil on high for 10 minutes, flip and cook for another 5-10 minutes, or until the chicken is cooked through.
- Serve with peanut sauce and lime wedges, and rice. Garnish with parsley.
