Banana Berry Breakfast Bake
Banana berry breakfast bake is a delicious make ahead oatmeal bake that makes morning meals a breeze. This sweet baked oatmeal breakfast will get your day started off right!
Do you want to feed your family the wholesomeness of oats first thing in the morning, but are they less than thrilled about that?
That’s the story in this house.
I used to be able to get the sons to gobble up some oatmeal at breakfast time.
Now, they take one look at it and you’d think I served them gruel.
However, this version of baked oatmeal loaded with bananas and berries changed everyone’s opinions.
In fact my boys love it so much, they call it oatmeal pie.
And they’re not wrong.
It’s lightly sweet and bursting with berry flavor that they (and you!) will love!
Ingredients
To make this you’ll need:
- Oats– Go for rolled oats, not quick cooking or steel cut. Both of those will change the texture.
- Brown sugar– Light or dark doesn’t matter but dark will give you a bit more of a molasses flavor.
- Baking powder
- Flavorings- Cinnamon and vanilla bring out the sweetness and makes this smell and taste incredible.
- Salt– Just a pinch for balance.
- Chocolate chips– Go for semi sweet here.
- Berries– The recipe calls for strawberries and blueberries but you could substitute blackberries or raspberries if you prefer.
- Banana– A ripe banana, just shy of banana bread worthy banana, is the kind you want.
- Milk– Let it come to room temperature.
- Egg– A large egg.
- Butter– Use unsalted butter and let it soften on the counter.
How to Make
Making this is so easy that even someone who doesn’t like to make breakfasts like me can throw this together effortlessly!
To make it, spray a 8×8 casserole dish generously with cooking spray. Then set it aside.
In a large bowl, mix the oats, brown sugar, baking powder, cinnamon, salt, half the chocolate chips and half the berries together until they are evenly incorporated.
Pour the mixture into the prepared casserole dish.
After it’s the oat mixture is in the dish, sprinkle the other half of the berries & chocolate chips on top of the mixture.
Then, slice the banana and put it on the berry layer.
Next, whisk together the milk, egg, butter and vanilla in a separate bowl.
Pour this over top of the oatmeal mixture, making sure the all oats are soaked evenly.
Bake at 375 degrees for 30 minutes.
Then, remove the casserole from the oven and sprinkle a tablespoon of brown sugar over the top of the casserole for added sweetness.
Bake for an additional 5 or 10 minutes or until the top of the casserole is golden brown.
Storing
This is a fantastic make ahead breakfast!
To store the leftovers, I keep them in the baking dish and cover them tightly with foil.
To reheat, just pop the dish bake in a 300 degree oven until warmed through.
The leftover baked oatmeal will store well for up to 5 days.
Tips and Tricks
- Feel free to play around with the berry combination and use your favorites!
- The extra sugar topping is optional but does create a lovely caramelized crust that is so delicious.
- You can skip the chocolate chips.

Instructions
