Crock Pot French Dip Sandwiches
Crock Pot French dip sandwiches feature the most tender, juicy, slow cooked pot roast ever piled high on crusty baguettes with melted provolone cheese. They are perfect for dipping into their yummy au jus!
How often does it happen that you can just throw a few things together and have someone else do all the work for you?

Let your slow cooker take over and do the all day work of slow simmering a beef chuck roast in beef broth, onion soup, and red wine and you’ll have some really delicious Crock Pot French dip sandwiches .

It’s so good and it’s going to make your house smell oh-so yummy.
Ingredients
To make these sandwiches you’ll need:
- Beef– A 3.5ish pound beef chuck roast.
- Beef broth– 16 ounces of it
- Condensed soup– A can of condensed French onion soup
- Wine– Your favorite red wine.
- Seasonings– Garlic powder, salt, and pepper
- Sandwich fixings– Your choice of rolls and sliced provolone cheese
How to Make
Making Crock Pot French dip sandwiches is so easy!
To do it, trim any excess fat off of the roast.
Then liberally season the meat with salt and pepper.
Pour the broth, soup, wine, and garlic powder into the bowl of your slow cooker.
Sit the roast in the liquid.
Cover the slow cooker and cook it on low for 6-8 hours or until the meat is falling apart.
Carefully remove the cooked beef from the slow cooker and put it onto to a plate or other serving platter.
Loosely tent the meat with aluminum foil and allow it to rest for about 15 minutes.
Either slice the beef or shred it with two forks.
Put the shredded beef back into the crock pot and let it finish cooking on low for another 30 minutes.
Just before building the sandwiches, toast the rolls.
Spread the cheese out onto the rolls and top the cheese with the beef.
Spoon the au jus into ramekins or other small bowls to serve along with it.
Serve everything nice and warm.

Storing Leftovers
I don’t recommend storing leftover assembled sandwiches, however the beef saves beautifully!
To store the leftover beef and au jus, transfer it to an airtight container in the fridge.
It will keep for up to 4 days in the fridge.
Reheat it in the slow cooker or microwave before serving again.

What is the difference between a beef dip and French dip?
Honestly nothing!
They are just two different names for the same general dish.
What is the difference between beef gravy and au jus?
Beef gravy and au jus both come from the drippings and seasonings of the meat.
However, gravy has a thickener like flour added to it whereas au jus does not.
Because of this, au jus stays brothier and thinner.
Tips and Tricks
- Adjust the seasonings to suit your taste.
- Make sure you use a red wine you would drink and avoid cooking wine if you can. It doesn’t really matter what kind of red wine you use just as long as you like the flavor of it!
- You could use another lean cut of roast beef to make this like tri-tip roast, top round roast or bottom round roast.
- Kick the sandwiches up even more by topping them with caramelized onions.

Crock Pot French Dip Sandwiches
Ingredients
- 3 1/2 pounds beef chuck roast
- 16 oz beef broth or about 1 1/2 cans
- 1 10.5 oz can condensed French onion soup
- 6 oz red wine
- 1 tsp garlic powder
- salt and pepper to taste
- 4-6 French rolls or other sandwich rolls of your choosing
- 8-12 slices provolone cheese
Instructions
- Trim any excess fat off of the roast, and liberally season the meat with salt and pepper.3 1/2 pounds beef chuck roast, salt and pepper
- Pour the broth, soup, wine, and garlic powder into the crock pot before sitting the roast in the crock pot in the liquid.16 oz beef broth, 1 10.5 oz can condensed French onion soup, 6 oz red wine, 1 tsp garlic powder
- Cook the roast on low for 6-8 hours, until it's falling apart tender.
- Carefully remove the cooked beef from the crock pot to a plate or other serving platter. Loosely cover it with aluminum foil and allow it to 'rest' for about 15 minutes.
- Roughly 'slice' the beef or use two forks to shred the meat, then return the beef to the crock pot and let it finish cooking on low for another 30 minutes.
- Lightly toast the rolls, and distribute the cheese between the rolls. I like to use two slices per sandwich. Top with cooked beef.4-6 French rolls, 8-12 slices provolone cheese
- Spoon the au jus gravy into ramekins or other small bowls, and serve everything nice and warm.
