A perfect, quick & easy weeknight meal, comfort food like this flavorful Cheesy Ground Beef And Rice Casserole is studded with kid friendly veggies and a creamy cheesy topping, making it a dinner kids will love and the answer to many a busy parent’s prayers.
I really have to give a nod to casseroles.
I love them…not just because they’re easy, but because they were some of the first things I ever started cooking.
Quick and easy casseroles are wonderful if you’re on a budget.
I also love them because they’re so easy to make “my own”, and typically I’ve always got to put my own spin on things. I’m a tweaker, and I can’t not tweak a new recipe.
Casseroles are also a life-saver on busy weeknights.
I’m trying to get everybody where they need to go, homework done, some gym time in, AND I’ve still got to get a hot, hearty meal on the table before bed time?
<Enter, you guessed it, a casserole> Hello, friend.
And this ground beef recipe one’s destined to be your BFF. I kid you not, my little ravagers didn’t save me a single bite the first time I made it. My husband even had the nerve to ask me if I was making more- like a second batch. He went as far as to as my price to make another dish of it that night (I didn’t charge, it’s not hard but he doesn’t need to know that).
I’ve heard of engagement chicken, but this right Cheesy Ground Beef And Rice Casserole should be called engagement casserole!
If you have a pound of ground beef, you’ve got dinner. This cheesy ground beef and rice casserole is a perfect one stop shop for a weeknight meal.
Shoot, it will still be good on a Saturday or Sunday. Dinner shouldn’t be stressful on the weekends either 🙂
Enjoy every last bite of this quick and easy casserole.

Audrey says
Mmmm casseroles are the best! I wouldn’t have thought to put in sour cream or Greek yogurt, but it sounds like a great idea. Must try it!
Acacia says
This was delicious! I threw in a handful of diced bell pepper as well just for added flavor. My family loved it!
4sonsrus says
Diced bell pepper would be a perfect addition. Thanks for sharing with everyone, Acacia!

Another dish I know my boys will love, I’m seeing a pattern here lol. Anything with meat, cheese and sauce = happy boys! Thanks and have a great day:)
4sonsrus says
You’ve pretty much nailed down my formula for fuss-free dinners, lol 🙂
Tracy says
Can this be frozen??
4sonsrus says
I haven’t ever frozen it, because I didn’t think it would freeze well. I have made it ahead of time and refrigerated overnight before though with success. If you do end up trying it Tracy- let me know how it turns out!
Vernae says
This is by far one of the best one-dish meals I have tried. The cheese sauce was awesome I added crunched up French’s fried onions with the sour cream and cheese!
Ashley says
This was soooo good! We are going to try it with corn instead of peas next time!
4sonsrus says
Oh, that’s a great idea! I’ll have to give it a go next time around. I can taste it now…
Nicole says
What kind of rice did you use?
4sonsrus says
Traditional ‘white rice’ never turns out for me when I’m just cooking simple rice by itself, so the only rice I ever keep on hand is either jasmine or basmati. Although any of the three should work just fine in this recipe!
Genise says
Not my favorite. The sour cream curdled with the cheddar and came out grainy. Maybe leave out the sour cream next time.
Angela says

Thanks, Crystal. So glad you enjoyed it!

This was good. I mixed in Campbell’s Cauliflower Soup 1/2 into beef mixture 1/2 into Sour Cream /Cheese for topping. Fried Onions on top last 5min. The peas were best, plus I added sautéd diced carrots. Omitted the tomato sauce as the soup had tomato puree in it.
Anne says
The casserole was excellent. I did make modifications though. I used cauliflower rice instead, reduced the tomato sauce to half the can, and used chicken bouillon cube instead of broth. Delicious:)
4sonsrus says
Thank you, Anne for sharing your changes! Love the idea of subbing cauli rice for regular to reduce the carbs.

We’re gonna try this this week. Looks great!
Is it one cup of cooked rice or one cup of dry rice that you cook (and then end up with about 3 cups of cooked rice in the casserole)?
4sonsrus says
It’s one cup of cooked white rice. I usually use basmati or jasmine (because they cook quickly, which is convenient) but regular cooked white rice will work too.
phillip james says
bake covered or uncovered
4sonsrus says
Uncovered!
