Sheet Pan Meatloaf Dinner
This sheet pan meatloaf dinner gives you an entire meal on one pan. Enjoy a family meal just like Mama use to make with homemade meatloaf, mashed potatoes, and green beans with almost no clean up needed!
One of our most beloved family recipes is hands down my Grandma’s meatloaf.
Every single one of us loves it and whenever I make it everyone gobbles it up enthusiastically.
It is an easy way to make sure everyone will gather around our kitchen table for a nice family dinner/
And that means we get some quality time with the boys.
Nothing warms my heart more.
But with my own busy schedule I don’t always have time to make a meal like meatloaf that requires at least two sides- mashed potatoes and green beans.
Those are non negotiable.
Which is why I’m now bringing to you the most genius solution of all time.
Make your meatloaf and have time to eat it too, even on the busiest of nights.
This sheet pan meatloaf dinner is the answer!
Ingredients
To make this sheet pan dinner, you’re going to need a set of ingredients for the mashed potatoes, another for the meatloaves, and a final set for the green beans.
For the mashed potatoes you’ll need:
- Russet potatoes– All washed, peeled, and diced
- Water
- Butter– Either salted or unsalted
- Milk– You could also use cream or half and half.
- Salt and pepper
To make the meatloaves, you’ll need:
- Egg– 1 beaten egg
- Onion– A large diced onion
- Italian seasoning– Your favorite brand
- Tomato paste
- Bread crumbs– Panko
- Milk
- Parsley– Fresh parsley washed and finely chopped
- Ground beef– Make sure you are using lean ground beef
- Ketchup– To top each meatloaf
And for the green beans you’ll need:
- Fresh green beans– Trimmed
- Olive oil
How to Make
Like the ingredients, let’s divide this into four parts:
- making the potatoes
- preparing the meatloaves
- making the green beans
- finishing it
To Make the Potatoes
To make the mashed potatoes, start by lining a large sheet pan with aluminum foil and generously spraying the foil with non-stick cooking spray.
Put the potatoes in the center of the foil.
Season them with salt and pepper them, to taste.
Fold the foil up around the potatoes to create a ‘bowl’, add in the water, and finish folding the packet to seal it all in.
Cook them at 425 degrees for 10 minutes, and while they cook prepare the meatloaves.
Preparing the Meatloaves
Now that you’ve got the potatoes in the oven, it’s time to put together the meatloaf mixture.
Mix all of the meatloaf ingredients except the ketchup together in a large bowl until it’s evenly combined.
Shape the mixture into 6 mini meatloaves.
Scoot the potato packet to the left side of the pan.
Then carefully put the meatloaves in the middle of the hot sheet pan.
Spread the ketchup evenly out over top of each loaf.
Return the pan to the oven, baking for 23-25 minutes.
Take the pan out, and use a paper towel to sop up any grease.
Don’t skip this step.
Making the Green Beans
After you’ve sopped up the grease on the meatloaf, add the trimmed beans to the right side of the pan, in a single layer.
Drizzle them with the olive oil.
Sprinkle them with salt and pepper to taste and gently toss them to coat in the oil.
Bake again for 18-20 minutes.
Finishing the Meatloaf Dinner
After the beans are done, everything should be ready to come out of the oven.
Take the pan out of the oven and carefully open the potato packet, being sure to avoid the hot steam escaping.
Transfer the potatoes to the bowl of a stand mixer along with butter, milk, and salt and pepper to taste.
Using the whisk attachment, whip the potatoes until they’re smooth and creamy.
Plate, serve, and enjoy!
Storing Leftovers
If you have leftovers, I recommend storing each part of this dinner in separate airtight containers in the fridge.
Each part of the dinner should keep for up to 4 days or so in the fridge.
To reheat, I recommend microwaving the potatoes, adding an extra splash of milk if needed.
You can reheat the meatloaf and the green beans either in the microwave or in a hot oven until warmed through.
Tips and Tricks
- Make sure to use lean ground beef or the meatloaves will be too greasy.
- Don’t skip blotting the meatloaf with paper towels.
- You want to be very careful anytime you add something to the hot sheet pan
- Again be careful when you open the potato packet to avoid the hot steam that will escape.

Ingredients
For The Mashed Potatoes
- 1 1/2 lbs russet potatoes washed, peeled & diced
- 1/3 cup water
- 1 tbsp butter
- 2/3 cup milk
- salt & pepper to taste
For The Mini Meatloaves
- 1 large egg beaten
- 1 large onion diced
- 1 tsp Italian seasoning
- 1 tbsp tomato paste
- 1/4 cup Panko breadcrumbs
- 2 tbsp milk
- 3 tbsp finely chopped fresh parsley
- 1 1/4- 1/2 lbs lean ground beef
- 1/3 cup ketchup
For The Green Beans
- 1 lb fresh green beans trimmed
- 1 1/2 tbsp olive oil
Instructions
To Make The Mashed Potatoes
- Line a large sheet pan with aluminum foil, generously spray the foil with non-stick cooking spray. Put the potatoes in the center of the foil, and salt & pepper them, to taste.1 1/2 lbs russet potatoes

Use your hands (it’s ok, little soap and water will take it all off) and mix everything together until it’s evenly combined.1 large egg, 1 large onion, 1 tsp Italian seasoning, 1 tbsp tomato paste, 1/4 cup Panko breadcrumbs, 2 tbsp milk, 3 tbsp finely chopped fresh parsley, 1 1/4- 1/2 lbs lean ground beef
- Form the mixture into 6 mini meatloaves.
- Scoot the potato packet to the left side of the pan. Add the meatloaves (carefully) to the middle of the hot sheet pan. Spread the ketchup evenly out over top of each loaf.1/3 cup ketchup
- Return the pan to the oven, baking for 23-25 minutes.
- Take the pan out, and use a paper towel to sop up any grease. Don’t skip this step.
To Make The Green Beans
- Add the beans to the right side of the pan, in a single layer. Drizzle them with the olive oil. Salt & pepper them, to taste. Gently toss them.1 lb fresh green beans, 1 1/2 tbsp olive oil
- Bake again for 18-20 minutes.
To Finish
- Remove the pan from the oven. Open the potato packet, careful to avoid the escaping steam. Transfer the potatoes to the bowl of a stand mixer.
- Add in the butter and milk. Salt & pepper the potatoes, to taste.1 tbsp butter, 2/3 cup milk, salt & pepper
- Using the whisk attachment, whip the potatoes until they’re smooth and creamy.
- Plate, serve, and enjoy!

Hi, love your blog! Question on the cooking instructions…after you take out the meatloaf that has cooked 20+ minutes and remove any grease and add the green beans, do you keep the meatloaf in to cook with the green beans?

Just double the ingredients- however, for that many meatloaves, you’ll probably want to bake the meatloaves on one sheet pan and the veggies on another.
