Getting a hot meal on the table at a reasonable time every night is hard y’all.

I’m sure all of you with families of your own can relate.

Add to making something the whole family will like?

The struggle is real. And I will never be a short order cook.

Most days, I feel like I do pretty well.

Especially when I remind myself that while it may not have been my best effort- those are usually reserved for weekends– I managed while working two full time jobs, and  maintaining my kids schedules and home without outside help.

Probably why some days I say to myself that I can’t wait until the day I can hire a maid, or a nanny.

Still, when I flip through our family recipe book, or even when I’m sorting through my edited pics to choose a new recipe to share, I walk away feeling like I’m in a rut.

Every. Single. Time.

I feel like my blog should be sponsored by chicken.

Not a specific brand.

Not even a specific part.

Just– chicken.

Like how did I not realize that we eat this much poultry??

It’s a lot. And I hate for mealtime, no matter how hectic or harried, to feel tedious.

Lucky for you guys, and luckily for me that I don’t have overly picky eaters, I’ve been making an effort to ‘branch’ out in the meat department.

Which is probably why the teens were complaining so much this month when they had to do an updated deep freezer inventory, and didn’t know what several things were.

Poor babies.

At least you’ll have a very developed palate, even if right now you’ve got a cramped hand.

Long story short, that’s how I ended up withe the sausage in this meal in my shopping cart.

No idea what I wanted to do with it, just something different.

It said ‘different’ to me as long as it wasn’t going in a bun with peppers and onions, without being too far out of field.

And let’s be honest again folks, sausage is quick cooking.

It’s a merry melody of sweet and savory that bakes together on one pan, ensuring every bit of flavor is soaked up and set in.

When dinner’s done, there’s only one pan to wash.

Ingredients

  • 4-6 large pork sausages
  • 2 large red delicious apples cored and cubed
  • 1 1/2 lb fingerling or other small variety, potatoes
  • 1/2 lb baby carrots
  • 1 large red onion cut into wedges
  • 2 tbsp sage leaves chopped
  • 2 tbsp fresh rosemary leaves chopped
  • 2 tbsp honey
  • 3 tbsp olive oil
  • salt and pepper to taste

Instructions

  • To your sheet pan, add the apples, potatoes, carrots, onion, and herbs. Drizzle the honey and olive oil evenly out over top of them all. Season the veggies with salt and pepper, to taste. Use a spatula and carefully toss everything together, until the veggies are evenly coated.
  • Spread the veggies evenly out over the sheet pan. Make little troughs for the sausages and place them in among the fruit and veggies.
  • Bake at 400 degrees for 30 minutes, or until golden and cooked through.
  • Let the dish rest for 2-3 minutes before serving.

  1. Sheet pan dinners are the best! I feel the same way about chicken, but there are so many ways to cook it. My blog has more chicken recipes than any other type of food.
