As a busy Mom of four, life tends to come at me fast– especially around the holidays. So much seems to be packed into this one time of year. It starts with parent teacher conferences at the beginning of November and doesn’t seem to end until Winter Break. Busy, busy, and busy. With four school aged boys? It’s quadrupled.
A busy schedule is nothing new, and life waits for no one. Before I know it they’re all going to be grown and gone from the nest. With that in mind (no matter how thin I’m stretched) I strive to make each holiday unique. I live for finding new ways to make new memories with them. Sometimes though that also means bringing back old favorites year after year.
One thing’s for sure– I don’t want to have to choose between creating the family tablescape or painting place mats for Thanksgiving dinner and being chauffeur for the play group’s football game. - 2 tbsp butter
- 18-20 Farm Rich Italian style frozen meatballs, thawed and sliced in half
- 1 carrot, peeled and thinly sliced
- 1 small white onion, diced
- 1 stalk celery, thinly sliced
- 2 cups chicken stock
- 1/3 cup extra virgin olive oil
- 1/2 tsp dried parsley
- scant 1/2 tsp dried rosemary
- scant 1/2 tsp dried sage
- 1 (12-16oz.) loaf of ciabatta bread (or ciabatta rolls), roughly chopped into 1" chunks
- salt & pepper, to taste
- 1 tbsp chopped fresh parsley, for garnish (optional)
- In a large skillet over high heat, melt the butter. Add in the carrot, onion, and celery and cook, stirring often, until soft, 2-3 minutes, and transfer them to a large bowl.
- To the same bowl, add the meatballs, stock, oil, parsley, rosemary, sage, bread, salt & pepper. Stir everything until well mixed. Spread the stuffing mixture out evenly into a large cast iron skillet or into a 9" x 13" baking dish.
- Bake at 450 degrees, or until golden brown and bread is slightly crisp on top, 15-20 minutes.
- Sprinkle with chopped fresh parsley before serving.
