The hubs is a self-proclaimed Caesar salad connoisseur.

So it’s high praise that he approves of the authentic taste of this homemade Caesar dressing

And as for me- I don’t have to worry about creepy anchovies because this recipe doesn’t have any in it.

It doesn’t involve you using any anchovies to achieve the great taste you’re looking for.

A host of tangy ingredients, and a good bit of garlic, cover beautifully for the absent anchovies.

Thankfully, the Worcestershire sauce this homemade Caesar salad dressing calls for has all the anchovies flavor you need without actually having to see the things!

Ingredients

To make this salad dressing, you’ll need:

  • Mayonnaise– Full fat real mayonnaise, not mayonnaise style dressing.
  • Mustard– Both dijon mustard and dry mustard.
  • Vinegar– Go for red wine vinegar.
  • Parmesan cheese– Freshly grated
  • Olive Oil– Use good quality extra virgin olive oil and don’t substitute for a different oil in this.
  • Seasonings– Worcestershire sauce, minced garlic, and salt and pepper to taste

How to Make

This dressing is so easy to make you’ll wonder why you ever bought bottled dressing to begin with!

To do it, just add all the ingredients except the olive oil to a food processor or blender, and pulse or blend until they are completely incorporated.

Slowly add in a little bit of olive at a time, while continuing to blend.

Keep blending until the dressing has emulsified.

Let the finished dressing refrigerate until chilled to allow the dressing to thicken.

Serve over salad greens and enjoy!

Storing Leftovers

Refrigerate any leftover dressing for up to a week in a sealed jar.

Can I make this dressing ahead of time?

Yes. In fact, this dressing actually tastes better if you make it a bit ahead of time so the flavors have time to come together and the dressing has a chance to thicken.

I recommend making it at least an hour ahead of time.

Tips and Tricks

  • Adjust the garlic to suit your tastes.
  • Remember to use good quality ingredients- especially olive oil. Since the dressing relies on the oil for flavor, you don’t want to skimp on it.
  • You will know the dressing is ready to go in the fridge when it all comes together and has a uniform consistency.

  1. I pretend I don’t know what’s in Caesar dressing. But Worcestershire sauce has anchovies in the ingredients too. The Lea & Perrins Worcestershire I buy has anchovies on the list but I’ve heard there are vegan versions without them.

    1. I know it does, Audrey. For me though, all it’s other flavors are enough to cover that little fact up. The tang from actually using anchovies? I don’t know how I’d ever stomach going back into the kitchen, and we can’t have that. 😉

  2. Delicious! Thanks for sharing this recipe with us. I like that it doesn’t contain anchovy, which a lot of cesar dressings do and I don’t like that so much. So your recipe is perfect to bring along to a party like Fiesta Friday! Hope you had lots of fun partying with us! 😉 Sylvia

  3. Ooh I will have to try this out. I love caesar dressing so much, it’s my favourite dressing but I always use pre-made stuff because I don’t want to deal with anchovies! I don’t mind that they’re in there because I can’t see them, but if i make it myself I’llhave to and I think that’ll put me off! But anchovie free? sounds perfect!

  4. Your Homemade Caesar Salad Dressing looks so good, can’t wait to try it! Hope you have a great week and thanks so much for sharing with Full Plate Thursday.

Made this last night to go with your Caesar Pasta Salad. We had a lighter, non-creamy recipe that we used for years but wanted something creamier. I tried several dressing recipes from other sources and all were disappointing. Yours is fantastic, easy, and full of flavor. This is a definite keeper! Thank you!

This is delicious!! 😋 I followed the recipe but didn’t mince the garlic, and
added 4 cloves of garlic instead. All of the other recipies I found included lemon and anchovies, which I didn’t have. I love the pictures of your recipies but it is taking a Long Time to scroll through and continuously stops with a message to reload. Hoping this can be fixed to make scrolling through your recipies faster.
