This copy cat Ben & Jerry’s Cherry Garcia ice cream recipe is simple to whip up with no need for an ice cream maker! Silky smooth, creamy soft serve is studded with chopped sweet, dark cherries and chunks of dark chocolate, just like the original, but for a fraction of the price!
Add the heavy cream and the extract to the bowl of a stand mixer. Whip the mixture on medium speed, just until stiff peaks have formed.
2 cups cold heavy whipping cream, 1 tsp vanilla extract
Using a spatula, stir the condensed milk in until it's evenly incorporated.
1 14 oz can sweetened condensed milk
Use the same spatula to fold in the cherries and chocolate until evenly incorporated.
2 cups sweet dark cherries, pitted and roughly chopped, 4 oz dark chocolate, finely chopped
Pour the mixture into a metal loaf pan, and freeze until set. Scoop into bowls, or cones, and serve immediately.
Notes
The longer the ice cream sits in the freezer the more solid it will freeze. You might want to let it sit on the counter a few minutes to soften if it has been frozen for awhile.
Do not use lower fat dairy in place of the heavy cream. The ice cream will not work!
I highly recommend chopped dark chocolate over dark chocolate chips. This way the chocolate will get dotted throughout the ice cream and flavor it more while the chocolate chips will stay more in tact.
