  • 1 lb boneless pork chops roughly 1/2-3/4" in thickness
  • 2 tbsp extra virgin olive oil
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 1/2 tsp ground mustard
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/8 tsp chili powder

Instructions

  • Add the seasonings to a large bowl and whisk them together to evenly combine. Set aside.
2 tsp garlic powder, 2 tsp onion powder, 2 1/2 tsp ground mustard, 1 tsp salt, 1/2 tsp pepper, 1/8 tsp chili powder
  • Pat the pork chops dry using paper towels, then brush both sides of each chop evenly with olive oil.
1 lb boneless pork chops, 2 tbsp extra virgin olive oil
  • Season both sides of each pork chop evenly with the seasoning mixture, pressing it in to adhere as needed. Set the prepared chops aside.
  • Preheat your smoker to 225℉.
  • Using tongs transfer the prepared pork chops directly to the rack of the smoker. Smoke them for 1 hour, or until the internal temperature measures 160° in the thickest part of the meat.
  • Transfer the pork chops to a serving platter and tent with aluminum foil. Let them rest for 10 minutes.
  • Serve the pork chops warm with your favorite sides, and enjoy!

Notes

  • Use a meat thermometer to check for doneness.
  • You can adjust the seasoning to suit your tastes.
  • Any wood that you would use to smoke pulled pork would also work well to smoke pork chops. For a mild, sweet flavor go for fruit woods like apple or cherry wood. If you want a deeper flavor, hickory or mesquite both work well.
