Pineapple Upside Down Pancakes
Our favorite dessert dessert cake has been turned into a fluffy stack of delicious breakfast pancakes complete with sweet brown sugar caramelized pineapple rings and a maraschino cherry in the center of each cake. It's an indulgent breakfast and a real show topper to serve for a special brunch.

- 2 Eggs
- 2 oz. of Sifted Sugar
- 2 oz. of sifted Flour
- 1/2 a pint of Milk
- Pineapple Slices/Rings
- Maraschino cherries
- Brown Sugar
- 2 oz butter
Start by beating your eggs.
Beat your butter until creamy and add in eggs.
Add in sugar and flour, and mix well.
Add in milk, and mix until smooth.
Pour 3/4 of a cup of pancake batter on your skillet or buttered plate.
Add one pineapple slice and one cherry to the top of batter as shown.
Sprinkle with brown sugar.
You can make them on the stove top in a greased skillet, or bake in a 325 oven for 20 minutes on a buttered plate.
If using a skillet flip after about 2 minutes.
