Pumpkin Spice Waffles
Fluffy homemade pumpkin flavored waffles are lightly spiced with the flavors of clove, nutmeg, and cinnamon making a stack of them the perfect breakfast or brunch for the Fall season.
- 1 3/4 cups all-purpose flour
- 2 teaspoon baking powder
- ½ teaspoon salt
- 3 large eggs separated
- 2 tablespoons Dixie Crystals sugar
- 1 cup pumpkin puree
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon ground cloves
- 4 tablespoons butter melted
- 1 3/4 cups milk
- ¼ cup vegetable oil
- 1 teaspoon vanilla extract
Using a stand or hand held mixer, beat egg whites until stiff peaks form, adding in sugar towards the end.
Combine remaining ingredients in a separate bowl and stir together, making sure to not over-stir. Fold in the whipped egg whites, until just incorporated.
Cook in a waffle iron according to waffle iron instructions.
Top as desired, with whipped topping, pecans, syrup, etc.
