Pumpkin Spice Waffles

Ingredients

  • 1 3/4 cups all-purpose flour
  • 2 teaspoon baking powder
  • ½ teaspoon salt
  • 3 large eggs separated
  • 2 tablespoons Dixie Crystals sugar
  • 1 cup pumpkin puree
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • 4 tablespoons butter melted
  • 1 3/4 cups milk
  • ¼ cup vegetable oil
  • 1 teaspoon vanilla extract

Instructions

  • Using a stand or hand held mixer, beat egg whites until stiff peaks form, adding in sugar towards the end.

  • Combine remaining ingredients in a separate bowl and stir together, making sure to not over-stir. Fold in the whipped egg whites, until just incorporated.

  • Cook in a waffle iron according to waffle iron instructions.
  • Top as desired, with whipped topping, pecans, syrup, etc.

Notes

  • Make sure the egg whites are properly whipped and don't rush this. They need to be stiff peaks so that the waffles are fluffy.
  • Don't over mix the ingredients. This results in a denser waffle.
  • If you reheat the waffles, keep in mind they will be crispier due to reheating.
