Peanut Butter Cookie Overnight Oats

Getting a hearty breakfast together has never been easier than with this peanut butter cookie overnight oats recipe. Mix everything together in a bowl the night before, refrigerate overnight, and wake up to creamy peanut butter flavored cold oats that're ready to grab & go.

Ingredients

  • 3/4 cup milk
  • 1/2 cup plain yogurt
  • 3 tbsp creamy peanut butter
  • 1/4 tsp salt
  • 2 tbs sugar
  • 1 cup Old fashioned rolled oats
  • 1/4 cup Protein powder optional
  • 2 peanut butter cookies crumbled, for garnish (optional)
  • mini chocolate chips for garnish (optional)

Instructions

  • Mix all the ingredients together until evenly combined.
  • Divide between 2 small bowls, mugs, or mason jars. Cover and refrigerate overnight (or for at least an hour (or more) so the oats soften and absorb the liquid).
  • Enjoy cold, or microwave for 30-60 seconds to enjoy warm. Top each prepared bowl with a sprinkle of chocolate chips and/or a small scoop of peanut butter (totally optional).

Notes

  • Do NOT try to substitute steel cut, or quick cooking oats, in this recipe.
  • These overnight oats can be eaten cold or warmed in the microwave until no longer chilled.
  • Want to go for extra indulgence? Top your oats with a drizzle of creamy peanut butter in addition to the crumbled cookies & chocolate chips.
  • As written, this recipe makes two hearty servings. It can easily be doubled or tripled to feed a larger family or to make enough for a week's worth of breakfasts.
