Lemon Tarragon Chicken Salad

Ingredients

  • 2 cups cooked, cubed rotisserie chicken
  • 3/4 cup thinly sliced celery
  • 1/2 cup mayonnaise
  • 1/4 cup chopped red onion
  • 1-2 tbsp freshly minced tarragon
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp lemon zest
  • salt & pepper, to taste

Instructions

  • In a large bowl mix together the chicken, celery, mayonnaise, onion, tarragon, lemon juice, and zest until the mixture's completely incorporated.
    2 cups cooked, cubed rotisserie chicken, 3/4 cup thinly sliced celery, 1/2 cup mayonnaise, 1/4 cup chopped red onion, 1-2 tbsp freshly minced tarragon, 2 tbsp freshly squeezed lemon juice, 1 tsp lemon zest
  • Seal the chicken salad, and refrigerate until chilled. 
  • Season with salt and pepper, to taste, and serve.

Notes

  • Let it chill fully before you make this to give the flavors a chance to come together.
  • Looking for a lighter option? Substitute plain Greek yogurt for the mayo.
  • Not a fan of celery or onions? That’s fine. Skip them.
