These viral Italian chip bag sandwiches make the perfect grab and go meal for busy days. Ingredients

For The Dressing

  • 1 1/2 cup mayonnaise
  • 3/4 cup red wine vinegar
  • 1/3 cup extra virgin olive oil
  • 2 tbsp pepperoncini brine
  • salt, pepper, dried oregano, and garlic powder to taste

For The Chip Bags

  • 6-8 1/2 oz bags salt and vinegar kettle cooked chips
  • 12 slices provolone cheese chopped into bite sized pieces
  • 18 slices hard salami chopped into bite sized pieces
  • 3 cups thinly sliced romaine lettuce
  • 3/4 cup chopped black olives
  • 12 pepperoncini peppers chopped
  • 3/4 cup grated Parmesan cheese

Instructions

  • Add all of the dressing ingredients to a small mixing bowl. Whisk together until smooth & creamy. Set aside.

  • Add the cheese, salami, lettuce, olives, pepperoncini, and Parmesan to a large mixing bowl. Toss until evenly combined.
    12 slices provolone cheese, 18 slices hard salami, 3 cups thinly sliced romaine lettuce, 3/4 cup chopped black olives, 12 pepperoncini peppers, 3/4 cup grated Parmesan cheese
  • Using scissors, evenly cut across the tops off the chip bags to open them but removing as little 'bag' as possible.
    6-8 1/2 oz bags salt and vinegar kettle cooked chips
  • Squeeze the bags gently to break up the chips a bit, but do not crush them. Dump all of the chips into the mixing bowl, stirring until they're evenly incorporated into the filling.
  • Add your desired amount of dressing to the mix and gently toss everything together until evenly coated.
  • Scoop or spoon the mixture back into the chip bags, serve immediately, and enjoy!

Notes

  • Be sure you're using kettle cooked style chips. They're thicker and sturdier than regular potato chips, and will not turn to mush immediately when tossed with the dressing.
  • For the best flavor I recommend using salt & vinegar flavored chips; however, plain chips make a good substitute.
  • Don't skip the pepperoncini juice in the dressing. It adds the perfect amount of zing! However, if spiciness is a concern, make sure you use mild pepperoncini.
  • Once assembled, these walking grinders need to be eaten immediately for the best texture and flavor.
  • If making them to take on the go, prep everything, but store the salad, and dressing separately. Add the chips and dressing and mix just before you're ready to serve them.
  • Perfect for enjoying on the sidelines at sports fields for games and practices, pool side or on the beach, or as a fun way to change things up for lunch or dinner that will surprise the whole family.
