Crockpot Crack Chicken Sandwiches

Crock Pot crack chicken sandwiches are simply addictive! This easy chicken sandwich filling features shredded slow cooker chicken with a rich seasoning blend, cheddar cheese, and bacon.

Ingredients

  • 2 lbs boneless skinless chicken breasts
  • 2 8 oz blocks cream cheese
  • 2 packets dry Ranch seasoning
  • 8 oz bacon cooked crisply and crumbled
  • 1/2 - 1 cup shredded cheddar cheese + more for sandwiches if desired

Instructions

  • Add the chicken, cream cheese, and Ranch seasoning to the bowl of your crockpot or slow cooker.

  • Cook it on low for 6-8 hours or on high for 4 hours. Then shred the cooked chicken, the easy way or by removing it to a plate and pulling it apart with two forks.
  • Return the shredded chicken to the crockpot and use a large spoon or a sturdy spatula to stir until the mixture is evenly combined.
  • Add in the cheese and bacon, stirring until the cheese is melted and everything's mixed well.
    8 oz bacon, 1/2 - 1 cup shredded cheddar cheese + more for sandwiches
  • Serve the 'crack' chicken warm on hamburger buns or sandwich bread, toasted or plain, topped with a sprinkle of shredded cheese (optional).

Notes

  • I recommend using chicken breasts, as instructed, but chicken thighs will also work. Use a pair of kitchen sheers to trim all the excess fat off before adding them to the bowl of the crockpot.
  • Don’t have ranch seasoning mix on hand? Omit it from the initial steps. When you’re stirring everything together with the shredded chicken add 1/2-3/4 cup ranch dressing. Stir until it’s evenly incorporated.
  • While this recipe is intended as a sandwich spread, we’ve also served it with thick crackers as a dip. We’ve also incorporated it into grilled cheese sandwiches and quesadillas.
