Strawberry Chocolate Chip Cookies
The best chocolate chip cookies you've ever had are studded with bits of fresh ripe strawberries.
- 1 cup butter, softened
- 1 cup packed brown sugar
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tbsp vanilla
- 3/4 tsp baking soda
- 1/2 tsp salt
- 3 cups flour
- heaping 1 cup semi sweet chocolate chips
- 1/2 cup diced fresh strawberries
- additional chocolate chips and berries, for garnish
In the bowl of a stand mixer, cream together butter and sugars.
Add in the eggs and vanilla, mixing until just evenly incorporated.
In a separate bowl, whisk together the salt, baking soda, and flour. With the mixture beating on low speed, slowly add the flour mix into the bowl. Continue just until all of the dry ingredients are evenly incorporated.
Use a spatula to fold in the chocolate chips and the diced strawberries.
Line a baking sheet with a baking mat, or a sheet or parchment paper, and drop the dough out onto the tray in evenly dispersed, rounded tablespoons.
Bake the cookies at 350 degrees for 10 minutes, or until the cookies have begun to brown. Remove the cookies from the oven and let them rest for 5 minutes.
Press 1-2 additional chocolate chips and pieces of strawberry into the top of each cookie. Transfer the cookies to a wire rack to finish cooling completely before serving.
