Ingredients

  • 1 1/2 - 2 lbs cooked ham trimmed of fat & chopped
  • 2 stalks celery chopped
  • 2 hard boiled eggs
  • 1/4 cup minced yellow onion
  • 1 tbsp dill pickle relish
  • 1 tbsp Dijon mustard
  • 1 cup mayonnaise if too dry, you can always mix in more
  • salt & pepper to taste

Instructions

  • Add all of the ingredients, except mayo, to the bowl of a large food processor fitted with the blade attachment.
  • Pulse the mixture until everything is evenly minced, roughly 20 times.
  • Transfer the mixture to a large mixing bowl.
  • Add the mayonnaise to the bowl, and stir until evenly combined.
  • Season the ham salad with salt & pepper, to taste.
  • Serve, as is, and enjoy- or cover & chill, then serve.

Notes

  • You don't need to food process this if you don't have one. You could just chop everything by hand and toss it together with the mayo. It will taste the same but the texture won't be quite the same.
  • Add a little paprika for extra flavor or garnish.
  • Not a relish fan? You could omit this if desired.
