Buffalo Chicken Meatballs with Blue Cheese Sauce

Ingredients

For the Chicken Meatballs:

  • 2- pounds ground chicken
  • 2 eggs
  • 2 cup all-purpose flour
  • 1 12-ounce bottle of hot sauce
  • ½ cup green onion chopped
  • 2 teaspoons garlic powder

For the Blue Cheese Sauce:

  • 6 ounces blue cheese crumbles
  • 1/3 cup buttermilk
  • ¼ tablespoons sour cream
  • 2 cloves garlic minced
  • 2 teaspoon lemon juice
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon ground mustard powder
  • 1/2 teaspoon salt

Instructions

  • Heat the oven to 400 degrees Fahrenheit
  • Prepare the blue cheese sauce, combine the blue cheese, buttermilk, sour cream, garlic, lemon juice, Worcestershire sauce, black pepper, mustard powder, and salt in a medium bowl until combined
  • Refrigerate the sauce for about 30 minutes to allow the flavors to marinate together
  • In the meantime, combine the ground chicken, egg, flour, 1/3 cup of the hot sauce, green onion, and garlic powder in a large mixing bowl
  • Roll the mixture into 1 ½ -inch balls and place on a baking sheet
  • Bake the meatballs for 15-18 minutes, remove from the oven and allow to rest for about 10 minutes
  • Toss the meatballs in the remaining hot sauce
  • Drizzle the blue cheese sauce over the chicken meatballs or serve in small side dishes to dip in
  • Enjoy!

Notes

  • Don't be afraid to use your hands to mix the meatballs. Sometimes I find it a lot easier if the ingredients aren’t coming together with a spoon or spatula.
  • Want to add a surprise to the middle? Stuff a small cube of cheddar cheese inside the meatballs before baking.
  • Vary your hot sauce flavor to create tons of different meatball varieties.
