Whipped Blackberry Butter

- 1 stick salted butter softened to room temp
- 1/4 cup fresh blackberries
- 1-2 tbsp heavy cream as needed
Add the softened butter to the bowl of a stand mixer. Using the paddle attachment, beat it until nice and creamy. Alternatively, you can use a hand mixer.

Add the blackberries, and whip again until they're evenly incorporated. Add the cream, only as necessary to encourage mixing. Do not feel forced to use it, or all of it, if not necessary.
1/4 cup fresh blackberries, 1-2 tbsp heavy cream
Using a spatula, scrape the butter mixture out onto a sheet of plastic wrap. Fold the wrap up, end over end, to cover completely, then gently roll the butter to form a log shape.
Twist both ends, spinning to seal, like you would a hard candy. Tuck both ends under.
Refrigerate flat until the butter's solid.
Slice and serve, or soften and use.
- Make sure all of your ingredients are at room temperature before you begin. If the berries or the cream are still cold, they will immediately cause the softened butter to firm back up when introduced.
- Do not try to skip the step of whipping the butter, it's essential to the recipe and finished product. Whipping it makes for a smoother butter that's easier to spread overall, even when chilled. This is particularly important here since you're adding extra ingredients to it.
