- 2 large eggs beaten
- 1 15 oz can evaporated milk
- 1/2 cup flour
- 1 16 oz block sharp cheddar cheese shredded
- 1 16 oz block Monterrey jack cheese shredded
- 1/2 cup crisp, crumbled bacon optional
- 1/2 cup drained, diced pickled jalapenos
Add the eggs, milk, and flour to a large mixing bowl. Whisk everything together until evenly combined.

Add the remaining ingredients to the bowl, and stir again just until everything's evenly combined.

Pour the mixture into a greased 7x11" baking dish and spread it out in an even layer.
