Spinach Salad
Spinach salad is an easy, elegant starter that's absolutely packed with flavor. Our version of these classic greens includes crumbled bacon and slivered almonds for flavor and crunch. A delicious bacon vinaigrette finishes this mouthwatering salad.

For The Dressing
- 1/2 cup extra virgin olive oil
- 2 tbsp white vinegar
- 1/4 tsp dried tarragon
- 1/2 tsp salt
- 1/4 tsp freshly cracked black pepper
- 1/4 tsp dry mustard powder
- 2 tbsp bacon drippings
- 2 cloves garlic minced
For The Salad
- 6-8 cups fresh baby spinach washed & dried
- 3/4-1 cup crisp, crumbled bacon
- 1/2 cup slivered almonds
Add all of the dressing ingredients to a blender, and blend until smooth.
Cover the dressing, and place it in the fridge to chill for 15 minutes.
Add the spinach to a large mixing bowl. Whisk the dressing vigorously to mix up to re-combine, and then pour it over the spinach.
Using a pair of tongs, gently toss until all the spinach is evenly coated in the vinaigrette-style dressing. The salad is ready to serve, and should be served within 5 minutes.
Just before serving, add the bacon and almonds. Toss gently to combine, and serve.
- Make sure to whisk the dressing well as you pour it to recombine it.
- Don't pour the dressing on ahead of time, the salad will wilt.
- If you want to get ahead, you could put the dressing together earlier and keep it separate from the greens.
