Smoked Cajun Honey Chicken Breast

Smoked cajun honey chicken breasts turn plain chicken into an explosion of sweet, spicy, and smoky flavor. Honey basting locks moisture into the chicken, creating the best smoked chicken breast you could imagine.

Ingredients

  • 4-5 boneless, skinless chicken breasts
  • 2 tsp Cajun seasoning
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • 1/2 cup honey

Instructions

  • Start up your smoker and set/get it to a temperature of 250F, and add the wood chips. Hickory, mesquite, or maple wood chips all would work well.
  • In a small bowl, mix together the Cajun seasoning, salt, garlic powder, onion powder, and black pepper until evenly combined.
2 tsp Cajun seasoning, 1 tsp salt, 1 tsp garlic powder, 1 tsp onion powder, 1/2 tsp black pepper
  • Rub the spice mixture evenly out all over the chicken breasts.
    4-5 boneless, skinless chicken breasts
  • Place chicken breasts in the smoker, directly on the grates. I recommend using tongs for this since the grates will be hot. Brush the chicken lightly with honey, and reserve the rest for later.
    1/2 cup honey
  • Cook for 2 1/2 - 3 hours, or until the chicken reaches an internal temperature of 165F, basting it with honey every hour.
  • Carefully transfer the hot chicken from the smoker to a waiting serving plate, and brush it with honey one final time.
  • Serve and enjoy!

Notes

  • Adjust the spice to match your preferences. For example if you want it to have a bit more of a kick than the cajun seasoning alone provides, add a half teaspoon of cayenne pepper.
  • Don’t skip the basting. Chicken, especially chicken breast because it is so low in fat, tends to dry out when you cook it for a long time over low heat like you do with smoking. The honey helps prevent this. Plus, every time you brush the chicken with honey, it adds more flavor and sweetness to this dish.
  • Serve it with rice, mashed potatoes or over salad. It also is delicious in a bun with a little coleslaw on top for a cajun chicken sandwich situation.
