Smoked Baked Potatoes

Smoked baked potatoes are an easy way to upgrade the classic side dish. Throwing Russet potatoes in the smoker infuses this simple, classic side dish with so much flavor!

Ingredients

  • 8 large russet potatoes
  • 1/2 cup extra virgin olive oil
  • 2-3 tsp kosher salt

Instructions

  • Wash, scrub, and pat the potatoes dry with paper towels.
    8 large russet potatoes
  • Using a sturdy fork poke holes evenly out all over the prepped potatoes.
  • Rub the prepped potatoes all over with olive oil, then sprinkle them evenly with salt.
    1/2 cup extra virgin olive oil, 2-3 tsp kosher salt
  • Transfer the prepped potatoes directly onto the rack of your smoker.
  • Smoke at 225° for 2 1/2 - 3 hours, or until fork tender and crispy on the outside.
  • Using a pair of tongs transfer the smoked potatoes to a wire rack and let them cool until they're just warm to the touch.,
  • Serve them with your favorite toppings, and enjoy!

Notes

  • Make sure you poke holes all through the surface of the potatoes so they potatoes don't explode while you cook them.
  • Salt the potatoes to your taste.
  • Scrub them well so you can eat the skins if desired.
