Crockpot Chicken, Sausage, and Rice
An easy Cajun style dinner, this 'casserole' cooks itself in the crock pot and features both chicken and smoked sausage.

Ingredients

smoked sausage
cut in 1" pieces

coarsely chopped onions

coarsely chopped green bell pepper

cup
coarsely chopped red bell pepper

cup
sliced celery
1 14-1/2
oz
can diced tomatoes
undrained

cup
chicken broth
4
bay leaves
6
boneless
skinless chicken thighs, about 2 lbs

cups
instant white rice
Instructions
Rinse chicken and pat dry
Place sausage, bell peppers, onions, celery, tomatoes, broth, bay leaves, thyme, paprika, and garlic powder in slow cooker.
Stir to blend well.
Top with chicken and sprinkle with black pepper, and crushed red pepper flakes.
Cover and cook 8 hours on low or 4 hours on high until chicken is cooked through and vegetables are tender.
Add rice and stir gently.
Cover and cook 15 to 20 minutes until rice is tender.
Remove bay leaves and chicken bones before serving.
Notes
For best results, do not remove lid during cooking.
