Pepperoni & Basil Tortellini Salad

This pepperoni basil tortellini salad is a delicious new twist on the staple Southern Summer side dish. Featuring cheese tortellini, pepperoni, sweet tomatoes, fresh basil, and mozzarella pearls- everything's bathed in creamy caesar dressing. It's quick, easy, and destined to an immediate new family favorite!

Ingredients

  • 1 20 oz pkg refrigerated cheese tortellini or about 3-4 cups frozen tortellini
  • 1 cup pepperoni slices quartered
  • 1/3 cup finely chopped fresh basil
  • 1 8 oz pkg fresh mozzarella pearls separated
  • 1 cup creamy Caesar dressing
  • 1 cup grape tomatoes halved lengthwise

Instructions

  • Cook the tortellini according to package directions. Drain and transfer the tortellini to a large bowl.

  • Stir together the dressing and the cooked tortellini.
    1 cup creamy Caesar dressing
  • Add in the pepperoni, basil, cheese, and tomatoes and gently stir together, so that the tortellini don't fall apart, until everything's evenly combined.
    1 cup pepperoni slices, 1/3 cup finely chopped fresh basil, 1 8 oz pkg fresh mozzarella pearls, 1 cup grape tomatoes
  • Cover and refrigerate for at least 2 hours to chill.
  • Stir again, serve, and enjoy!

Notes

  • For best flavor I recommend using plain cheese filled tortellini. If you don't have tortellini handy, you could substitute plain pasta instead.
  • Don't like caesar dressing? You can substitute a creamy Italian dressing instead.
  • Be careful to make sure your pasta has cooled before adding it to the mixing bowl otherwise it will melt your cheese and wilt the basil and tomatoes if it's still hot, or even potentially warm.
