Pecan Pie Truffles
Pecan pie truffles are a delicious addition to any holiday spread! These easy candies turn store bought pies into show stopping poppable candies that are perfect for gifting or capping off a festive celebration.

- 2 9 inch store bought pecan pies
- 2 cups white chocolate melting discs
- ½ cup chopped pecans
Place the pecan pies into a stand mixer fitted with the paddle attachment and mix on low for 1 minute, or until only small bits of crust are visible and it forms a sticky cookie dough consistency.

Scoop out 1 tablespoon of pie and roll into a ball, place onto a parchment lined cookie sheet.
Chill in the fridge for 30 minutes.
Melt the white chocolate in a microwave safe bowl in the microwave for 30 second increments, mixing well after each one, until smooth and fully melted.

Dip each chilled truffle in the melted white chocolate, and allow excess chocolate to drip off, using a fork.
Return to the sheet and immediately sprinkle with chopped pecans.

Chill for an additional 10 minutes to set the chocolate.
- Make sure to melt the chocolate in 30 second increments and stir after each time. You'll know the chocolate is done when you stir it and it looses it's shape. Do not microwave it past that point or it will burn and seize.
- Use a small cookie scoop to portion out the truffles.
- The pecans for garnish may also be called pecan chips, crushed pecans, or pecan pieces. You want them roughly the same size as crushed peanuts.
