Monte Cristo Breakfast Bites

- 2 cups diced ham
- 1 cup shredded Swiss cheese
- 1/3 cup honey mustard dressing
- 1 sheet puff pastry thawed
- 1 large egg
- 1 tbsp water
Add the ham, Swiss, and honey mustard to a small mixing bowl. Stir them together until evenly combined. Season with salt and pepper, to taste.

Lay the thawed puff pastry evenly out on a lightly floured surface and roll out into a 9x12" rectangle.

Spray a muffin tin with non stick cooking spray. Set aside.
Cut the pastry into 12 even squares, and press one into each of the prepared muffin tin wells. Spoon the filling evenly out into each.
In a small bowl whisk the egg and water together then brush the mixture over the edges of the pastry dough.

Bake at 425° for 15-18 minutes.
Serve warm and enjoy!
- If you wanted a sweeter version, you could skip the honey mustard and use maple syrup instead.
- For a sweeter version, you could also dust the top with powdered sugar.
- You could substitute turkey or even add other toppings like grilled onions to the cups depending on what your regional Monte Cristo sandwich is.
