Meaty Double Decker Mexican Pizza
This double decker Mexican pizza takes everything you love about Taco Bell's Mexican pizza and transformed it into a family meal. Layers of hearty seasoned ground beef and beans, cheeses, enchilada sauce and chopped tomatoes and cilantro leaves get piled on tortillas for a satisfying dinner.

- 1 1/2 lbs ground beef
- 1 1 oz pkt taco seasoning
- 1 cup refried beans
- 1 15 oz can diced tomatoes drained
- 1 1/2-2 cups shredded Mexican blend cheese
- 3 large burrito sized tortillas
- 1/2 cup red enchilada sauce
- 2 roma tomatoes diced, for garnish
- fresh cilantro leaves for garnish
In a large skillet over medium heat, brown the ground beef- stirring and breaking up as it cooks- until completely browned. Strain, and return to the skillet.

Stir in the beans until evenly incorporated and the mixture's smooth. Stir in the tomatoes and taco seasoning until evenly incorporated and the mixture's bubbling. Salt & pepper, if desired, to taste. Remove the skillet from heat.

Lightly spray a pizza pan with non stick cooking spray. Place one of the tortillas flat in the center of the pan. Spoon 1/3 of the beef mixture out onto the tortilla and use the back of the spoon to spread out in an even layer, but don't spread over the outer edges.
3 large burrito sized tortillas
Sprinkle 1/3 of the cheese evenly out over the meat mixture. Top with another tortilla and repeat this a second time.
1 1/2-2 cups shredded Mexican blend cheese
Spread the enchilada sauce evenly out over top of the third tortilla. Top with the remaining third of the beef mixture and cheese.
1/2 cup red enchilada sauce
Bake at 350 degrees for 20 minutes.
Top with diced tomatoes and cilantro leaves. Use a pizza cutter to slice into 6 pieces, and serve immediately with sour cream on the side. Serve with a crisp side salad for a complete family meal.

- You can play with the protein and substitute ground chicken or turkey for the ground beef. Shredded rotisserie chicken would also work well.
- Want a totally vegetarian version? Use vegetarian refried beans and double the amount.
- This Mexican pizza is easy to customize. Just omit anything you don't like and substitute what you do!
