- 2 ¼ cups all purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- ¾ cup warm water
- ¼ cup canola or vegetable oil
In a large bowl whisk together the flour, baking powder and salt. Create a well in the center of the flour mixture, then pour the water and oil into the bowl.

Mix until a thick dough has formed, then transfer to a lightly floured surface and knead until it comes together into a smooth ball.
Divide the dough into 8 equal pieces and roll each into a ball. Allow the dough to rest for 10 minutes.
Heat a heavy bottom skillet over medium heat.
Lightly flour each dough ball and then roll into a circle, as thin as you can make it, between two layers of parchment.
Peel the parchment from the tortilla and then transfer to the skillet, cooking until you see bubbles on the surface, about 1-2 minutes. Flip and cook an additional 1-2 minutes, or until puffed up.
Place on a clean kitchen towel and fold it over to keep warm while you prepare the remaining tortillas.
- You can use a tortilla press instead of a rolling pin to save yourself some elbow grease and get your tortillas nice and thin.
- Make sure to let the dough rest before you roll it out. This gives the gluten in the tortillas a chance to relax a little so the tortillas will be softer and easier to roll.
- Covering them is a must! It keeps the tortillas nice and soft.
