- 1 cup coconut milk
- ¾ cup natural peanut butter
- ½ cup water plus more as needed
- 3 tablespoons sugar
- 3 tablespoons apple cider vinegar
- 2 tablespoons red curry paste
- 1 tablespoon soy sauce
- ½ teaspoon salt
In a large sauce pan over medium heat, add the coconut milk, peanut butter, water, sugar, apple cider vinegar, red curry paste, soy sauce and salt.

Heat, stirring frequently, until the sauce boils and thickens and is smooth. Add additional water as needed to get desired consistency.
- This sauce is mildly spicy. If you want heat, you can add more curry paste or Sriracha to taste.
- For extra flavor, you could saute some pressed garlic and grated ginger into the sauce and finish it with a squeeze of lime.
- You can add more water if it is too thick.
