Ingredients

  • 1 cup coconut milk
  • ¾ cup natural peanut butter
  • ½ cup water plus more as needed
  • 3 tablespoons sugar
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons red curry paste
  • 1 tablespoon soy sauce
  • ½ teaspoon salt

Instructions

  • In a large sauce pan over medium heat, add the coconut milk, peanut butter, water, sugar, apple cider vinegar, red curry paste, soy sauce and salt.
1 cup coconut milk, ¾ cup natural peanut butter, ½ cup water, 3 tablespoons sugar, 3 tablespoons apple cider vinegar, 2 tablespoons red curry paste, 1 tablespoon soy sauce, ½ teaspoon salt
  • Heat, stirring frequently, until the sauce boils and thickens and is smooth. Add additional water as needed to get desired consistency.

Notes

  • This sauce is mildly spicy. If you want heat, you can add more curry paste or Sriracha to taste.
  • For extra flavor, you could saute some pressed garlic and grated ginger into the sauce and finish it with a squeeze of lime.
  • You can add more water if it is too thick.
