Grilled Chicken Caesar Sandwich

A grilled chicken Caesar sandwich is a combination of all the classic chicken Caesar salad wedged between a ciabatta roll. This is the perfect sandwich for lunch or a light dinner and so easy to make!

Ingredients

  • 1 cup romaine lettuce leaves roughly chopped
  • 1 lb boneless, skinless chicken breasts grilled, cooled, and sliced thin
  • 4 ciabatta/torta rolls toasted, for serving
  • 1/4 cup shredded Parmesan cheese or shredded, for serving
  • red onion sliced thin
  • Caesar dressing to taste

Instructions

  • In a small bowl, toss the romaine lettuce with 1 tablespoon of your caesar dressing, and set it aside.
    1 cup romaine lettuce leaves
  • Season both sides of the chicken breasts with the desired amount of salt and pepper.
  • Serve sandwiches on ciabatta/torta bread topped with romaine lettuce, sliced chicken, red onion, Parmesan cheese and additional caesar dressing, each in your desired amount.
    1 lb boneless, skinless chicken breasts, 4 ciabatta/torta rolls, 1/4 cup shredded Parmesan cheese, red onion, Caesar dressing

Notes

  • You can adjust the seasoning on the chicken to your liking and add Italian seasoning or anything else you like.
  • Not a fan of red onion? Skip it.
  • I like using a creamy Caesar for these sandwiches instead of a vinaigrette style Caesar dressing but you can use whatever you prefer.
