Dunkin Donuts Omelet Bites (Copycat Recipe)

- 4 large eggs
- 4 tbsp cottage cheese
- 1/4 cup shredded Monterey jack cheese
- salt & pepper to taste
- 1/4 cup shredded cheddar cheese
- 1 1/2 tbsp real bacon bits
Add the eggs, cottage cheese, monterey jack cheese, salt, and pepper to a blender. Blend until smooth & creamy.

Add the cheddar and bacon to the blender and pulse just until combined, but not pureed.
1/4 cup shredded cheddar cheese, 1 1/2 tbsp real bacon bits
Spray a standard donut tin with nonstick cooking spray. Spoon the mixture into the wells until even with the center donut prong.
Bake at 350° for 10 -12 minutes until set.
Transfer the omelet bites to a plate and serve warm.
- Worried your egg bites aren't done? You'll now they're done when the egg springs bac when touched. I recommend using a spoon to test since they'll be hot.
- If you don't have a donut pan, you can use a muffin tin instead.
- Swiss cheese makes a delicious substitute for the Monterey jack.
