Dunkin Donuts Omelet Bites (Copycat Recipe)

This copy cat Dunkin Donuts Omelet Bites recipe is a spot on dupe of the grab and go breakfast. Fluffy egg bites filled with cheese and bacon are a delicious breakfast for any busy morning and taste exactly like the fast food version but better!

Ingredients

  • 4 large eggs
  • 4 tbsp cottage cheese
  • 1/4 cup shredded Monterey jack cheese
  • salt & pepper to taste
  • 1/4 cup shredded cheddar cheese
  • 1 1/2 tbsp real bacon bits

Instructions

  • Add the eggs, cottage cheese, monterey jack cheese, salt, and pepper to a blender. Blend until smooth & creamy.

  • Add the cheddar and bacon to the blender and pulse just until combined, but not pureed.
    1/4 cup shredded cheddar cheese, 1 1/2 tbsp real bacon bits
  • Spray a standard donut tin with nonstick cooking spray. Spoon the mixture into the wells until even with the center donut prong.
  • Bake at 350° for 10 -12 minutes until set.
  • Transfer the omelet bites to a plate and serve warm.

Notes

  • Worried your egg bites aren't done? You'll now they're done when the egg springs bac when touched. I recommend using a spoon to test since they'll be hot.
  • If you don't have a donut pan, you can use a muffin tin instead.
  • Swiss cheese makes a delicious substitute for the Monterey jack.
