Caesar Style Grilled Asparagus
Grilled asparagus Caesar style is a staple of spring and summer grilling that's perfect as a side or even a light meal. It takes the vegetable to new heights with a drizzle of creamy dressing and a sprinkle of shredded Parmesan cheese.

- 1 1/2 pounds fresh asparagus trimmed
- 1 tbsp olive oil
- salt & pepper to taste
- 1/3 cup Caesar salad dressing more, or less, to taste
- 1/2 cup garlic flavored croutons
- 2 tbsp shredded Parmesan cheese
- fresh cracked black pepper to taste
To a large mixing bowl, add the asparagus spears, oil, and a liberal amount of both salt and pepper. Toss them so that the spears are all evenly coated.

Grill the asparagus over medium-high heat (turning only once or twice) until crisp-tender and slightly charred.
Using tongs, gently transfer the asparagus to a serving platter. Set aside to cool for 2-3 minutes. So that it's still warm, but not so hot it will do funny things to the dressing or completely melt the cheese.
Serve topped with a generous drizzle of the Caesar dressing of your choice, a handful of croutons, and a sprinkle of Parmesan cheese, and another round of fresh cracked black pepper, to taste. Enjoy!

- This is a delicious side dish for any grilled entree but it also makes a really tasty addition to a Caesar or a chicken Caesar salad.
- To find where to cut your asparagus, look at the color of the stalks. The majority of the stalks will be green but closer to the bottom there will be a white or brownish white end. The white or brownish white area all needs to be cut off. For thicker stalks, you may need to the lower part of the green off as well.
- Let the asparagus rest long enough when it comes off the grill that it cools to slightly warm and not hot. If the asparagus is too warm when you dress it, the dressing may separate and the cheese will totally melt.
