Brown Sugar Roasted Pineapples

Brown sugar roasted pineapples are a sweet, tangy side dish that delivers the perfect mix of flavor and texture in every bite. Loaded with brown sugar and crunchy pecans, these caramelized pineapples are perfect with any dinner, as a holiday side, or even as a simple dessert.

Ingredients

  • 5 cups chopped pineapple or one large pineapple cored and chopped
  • 1/2 cup chopped pecans
  • 1/4 cup pineapple juice
  • 1/4 cup packed brown sugar
  • 1/8 cup flour
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/4 cup salted butter melted

Instructions

  • Lightly spray a 9x13" baking dish with non stick cooking spray. Spread the pineapple chunks and pecans out evenly in a single layer. Pour the pineapple juice out over top of the pineapples.

  • In a small mixing bowl add the sugar, flour, cinnamon, and salt. Whisk together until evenly combined. Sprinkle the seasoned flour mixture evenly out over the pineapples. Gently toss them to coat.

  • Spoon the melted butter evenly out over top of the pineapples.

  • Bake the pineapples at 450 degrees for 30 minutes, stirring every 10 minutes, until the pineapples are golden and caramelized with the brown sugar.
  • Remove the pineapples from the oven, and let them rest for 5 minutes.
  • Serve and enjoy!

Notes

  • Make sure to use pineapple chunks- not rings or tidbits.
  • Don’t skip spraying your baking dish with nonstick spray. If not sprayed, the caramelized sugars will cause the pineapples to stick to the dish.
  • Stir regularly while the pineapple bakes to make sure it cooks evenly and doesn’t burn.
