For The Beef
- 6 oz beef stir fry strips
- 1 tablespoon soy sauce
- 1 teaspoon cornstarch
- ½ teaspoon baking soda
For The Sauce
- 3 tablespoons soy sauce
- 2 tablespoons oyster sauce
- 2 tablespoons water
- 1 tablespoon oil
- 1 tablespoon shaoxing wine
- 1 teaspoon sesame oil
- ¼ teaspoon ground ginger
For The Stir Fry
- 2 tablespoons oil divided
- 1 onion sliced
- 12 oz. wide rice noodles cooked according to package directions
- 5 scallions sliced into 2” pieces
- 3 cups bean sprouts
To Make The Beef
In a large bowl, mix together the beef strips, soy sauce, cornstarch and baking soda. Cover and place in the fridge for at least 15 minutes.

To Make The Sauce
In a medium bowl, whisk together the soy sauce, oyster sauce, water, oil, shaoxing wine, sesame oil and ginger. Set aside until needed

To Make The Stir Fry
In a large skillet over medium high heat, add 1 tablespoon of oil and the beef strips. Cook, stirring frequently, until cooked through. Remove from the pan.

Add the remaining oil and the sliced onion and cook, stirring often, for 2-3 minutes.

Add the noodles, scallions, bean sprouts and stir fry sauce and cook for an additional 3-4 minutes.
12 oz. wide rice noodles, 5 scallions, 3 cups bean sprouts
Add the beef strips and stir to combine. Cook until heated through and the sauce thickens slightly. Serve immediately.
- Do not use sesame oil for all the oil in the dish. Sesame oil is extremely strong flavored and will overpower the dish if you use it for everything.
- Make sure you have everything ready to go before you start to stir fry the dish. It moves very quickly once you start to stir fry it.
- Be careful not to over cook the noodles.
