- 6-8 frozen chicken tenders
- ¾ cup mayo
- ¼ cup honey
- 1 tablespoon dijon mustard
- 1 teaspoon sesame oil
- ½ teaspoon salt
- ¼ teaspoon pepper
- 2 heads romaine lettuce washed and chopped (about 8-10 cups)
- 1 cup purple cabbage thinly sliced
- 1 cup shredded carrots
- ⅔ cup dried chow mein noodles
- ¼ cup slivered almonds
Prepare chicken tenders according to package directions
While chicken tenders are cooking, make the dressing by stirring together the mayo, honey, dijon mustard, sesame oil, salt, and pepper until well combined; set aside in fridge until ready to use
In a large salad bowl, mix together the lettuce, cabbage and carrots, then top with chow mein noodles, almonds
Once chicken tenders are finished cooking, cut into bite sized pieces and add to salad
Toss with dressing and serve immediately
- Feel free to sub out the romaine for other lettuce if desired. Crunchier lettuces like iceberg work better than softer greens.
- For extra flavor, you could toss a drained can of mandarin oranges into this salad. The restaurant version includes this.
- Add a little heat to the dressing with a touch of sriracha.
